Hell of an awful day, so husband cooked a frozen pizza, just so we had some form of relative nutrition.

Metro has prime rib on sale for $4.99 lb so will p/u some today...so BBQ it is...potato packet mixed with yellow potato, sweet potato and onions, mushroom packet cooked in sour cream, splash of chicken broth and spices..
..I bought this Blue Menu three cheese Peperoncini dip, has anyone tried it? Whew! it's spicy hot, tried it last night.LOL Might try heating it and have on grilled pieces of baguette....warning: causes drinking large amounts of wine to put the fire out...

Tonight was boneless chicken breasts on my Cuisinart Griddler. I marinated four breasts for maybe half an hour - two in Kraft balsamic salad dressing, two just with salt, pepper, chipotle power and a bit of dry mustard, then applied BBQ sauce to those two as they cooked. To be honest, didn't find a great difference between the two different kinds.
I was recently watching a BBQ show, where they cooked chicken thighs (our standard protein) in a muffin tin. Mind you this was in a smoker or giant BBQ thing, so different than anything I've got, but thought this might not be a bad thing in the oven either. I'm going to give it a go soon. I've made chicken thighs before that I boned first, then just folded in half with roasted pepper, garlic and mozza inside on the bbq, this could work too.Last edited by Zonny; Sat, Apr 12th, 2014 at 08:04 PM.

Oy, I must have been in a mood if I actually wrote that here - husband has his ongoing problem with pinched nerve in back and it's rough seeing him that way - but on top of that, I got out of commission with a hurt foot and leg! ARGH! Just frustrating to have two of us so much less mobile - the dishes have piled up, we have no milk or bread.... sorry to unload!
Plus he had a tummybug earlier today, but he needs to eat because of pain meds and the fact that he's too skinny, so I just made a roaster of sliced onions, chopped carrots, sliced potatoes, s+p, Italian seasoning, put some strips of bacon on top and baked it. Simple but tasted good and he ate! I had corn with my meal, too.
You guys are the best on this thread, and SC just is, in general!

still not feeling the inspiration to dive in there ( kitchen) yet to create the weeks dishes. Zonny, I like the chicken thigh in the muffin tin idea though, that would be different at least.

Hope all you ailing SC'ers feel better soon. Nat - a pinched nerve for your hubby & a boo foot & leg for you - that's a bummer! Please don't worry about the dishes either........they will always wait for you.

my BBQ turned out great, hard to go wrong with steak & potatoes. It was yummy. RCSS had lean ground beef on sale for $2.49/lb this weekend so I also stocked up on that, if I'm home will prob just grill some burgers and have a caesar salad with it...
