I found a really delicious roast chicken salad recipe (here is you're interested) and went to get a roasted chicken from Safeway since they are on sale this week. Well there ovens are broke so no roast chicken but I did find some bbq pulled pork on sale so instead I'm making pitas with bbq pulled pork, apple coleslaw and lettuce.

I got a ton of fresh chicken legs at .99 cents a pound at my local No Frills yesterday. The average package had eight in it and cost about 2.25. So I think I will make some bbq flavored and some honey garlic flavored for supper. Probably have some rice and veggies with them. Chicken legs are going to be for dinner quite often lol.

We're having whole wheat chicken wraps with watermelon, green grapes, and a glass of milk. The best part is that my brother will be joining us.

So lucky to find them at that price. Did they have backs attached, or no? Either way, so many things you can do with them!

I got totally spoiled for supper. We had takeout from a very nice restaurant here - husband had baby beef liver (which I don't cook, so yay for him when he gets the urge); I had breaded cutlets, they were amazingly good, not just tasty but there were two huge pieces - had them with fries, and for some reason the garnish was a sad lettuce leaf and a slice of cantaloupe (?). Soup was orzo, and it was fab! Decent garden salad. Garlic toast wasn't toasted - very odd and soggy.

I just finished straining a pot of chicken broth. I've never actually simmered the carcas from a roast chicken before. I'm going to put the broth and small pieces of meat into the fridge for tonight. Tomorrow I will make it into soup. Our fridge is freezing veggies on me, so that's part of why I am making the soup. I have carrots and celery to use up. I'm going to add quinoa and onion to it. Not sure what else. I am feeling ambitious, so we'll see how things go tomorrow. I want to make biscuits to go with it. I also plan on making crab apple muffins. I made the crab apple sauce last week, so now I have to tinker with my muffin recipe to use this apple sauce instead. The lady that I got the crab apples from wants to buy some of the goodies from me for her own young family.

Friday we picked up Mary Brown's after going to 3 Wal-Mart's to find what we needed. Chose Mary Brown's so Mom would have left overs to eat as I would not be home on Saturday for dinner. Only downside took over 30 minutes to get our food, it is a new location that does not seem to be able to handle walk-in and drive tru traffic. When we first got there the drive tru sat for forever (over heard an employee saying the guy at the window had been sitting there atleast 20 minutes) but than they started clear the drive tru but no one who was in the restaurant waiting for take-out was being served as they seem to be pushing all the food to the drive tru. But at the end of the day it was so good and so filling.

Saturday was our company golf tournament an afternoon of 9 holes of golf followed by a steak dinner which included Steak, baked Potato, Cesar Salad, coleslaw and bread. Super yummy, I am not big on eating steak out but they do quite a nice job and give you tons of food, I was stuffed.

Tonight is s mystery still, mom is making tomato jam which takes up the whole kitchen so not sure what we will be able to get together for dinner yet.

I don't feel like cooking or roasting or frying,
I don't want to chop onions as my eyes will be crying,
I don't feel like BBQing or being a cooking trooper,
& tonight you can call me Loocie - The Dinner Party Pooper,
No cutting boards with crumbs that end up all over the floor,
No wondering what's cooking behind Mom's Kitchen door,
I'm offering leftover chicken cacciatore style stew,
With lots of fresh garlic & garden fresh tomatoes too,
Although it comes from the freezer, I'll heat it up with love,
I guess you can call it a meal, when push comes to shove.

It is cool and drizzling here, so my meals have been matching the weather. I bought a loaf of french bread for 99c at Sobeys. I am going to make chili to go with it. We haven't had chili in quite a while. I might even use my fresh yellow pear tomatoes as part of the sauce.
