Just pulled 2 freshly baked quiche out of the oven. It was one of those accidents that started out just trying to use up the soft mushrooms, fresh spinach, bell peppers all expiring soon. Grated 3 cheeses, added the eggs and tossed in a splash of my homemade zucchini relish, black pepper, Italian seasoning and chili powder for a kick. If it does not get all gobbled between now and 6:00 p.m. that will be dinner.

Tonight is whatever you find in the fridge, leftover pizza for me and sausages for mom. Quick and simple but the good news is not take out which it would normally be since we were out most of the day.

DH and DD made dinner-BBQ burgers on English muffins( since we had no buns), steamed carrots, perogies and some grape tomatoes and grapes- it was quite tasty especially since I did not have to make it! I think I should dissapear and have a bath and leave them in charge more often-lol!

I didn't have to cook, either!
Had takeout Chinese food - from our former favourite place near where we used to live. Sometimes it's so nice to revisit old flavours - and yummy ones. They still make the absolute best wonton soup, and BBQ pork chop suey.

dinner tonight will be blade roast with mashed potatoes, gravy, salad, and some stir fry vegies (bok choy, sugar peas, yellow peppers and cut up broccoli stem). Dessert will be Key Lime Pie which i just finished making!

For us, we will have hamberger steack with mash potato, gravy and a garden salad. Hmmmm I am hungry for that now.

Comfort food is on the menu & for me that's macaroni & cheese,
I like to used aged white cheddar & swiss or edam if you please,
I will top it off will bread crumbs & bake it in the oven till it is at its bubbliest best,
I like it to be a bit nippy, so I add a pinch of cayenne to my cheesy quest,
I'll be happy with a side salad that someone can toss up for me,
As long as it is green, fresh & crispy & just enough for us three,
Gingerbread cake for dessert with a little swish of whipped cream,
Sometimes those simple meals fit so well into comfort food theme.

Had a fantastic weekend at the cabin; it's a beautiful day here, so the extended family is packing a picnic and heading out to the beach for a cook-up; I'm not really prepared and a little tired..lol.. but will grab this and that out of the fridge/cupboards..make a quick cheese/meat/cracker platter, couple bottles of wine, some plastic cups..ready to go!

ribs again, fastest ones I ever did. bread crumbed some chicken breast pieces for DD. carrots, peas and broccoli. leftover quinoa and some beets.
