    • 3 tablespoons canola oil
    • 4 boneless, skinless chicken breasts
    • 1 green bell pepper, chopped (about 1 cup)
    • 1 medium onion, chopped (about 1 cup)
    • 3 cloves garlic, minced
    • 1 8-ounce can tomato sauce
    • 1 20-ounce can diced tomatoes, undrained
    • 1/2 cup Chianti wine
    • 1/2 teaspoon thyme
    • 1/8 teaspoon cayenne pepper
    • 1/8 teaspoon freshly ground black pepper
    • 1 12-ounce package noodles

    Instructions

    1. In a large skillet over medium heat, pour olive oil.
    2. Place chicken breasts into pan and brown on both sides, about 3 minutes each.
    3. Transfer chicken to plate, cover and refrigerate.
    4. Saute pepper and onion in pan until soft, about 5 minutes.
    5. Add garlic, tomato sauce, diced tomatoes, wine, thyme, cayenne pepper and black pepper.
    6. Cover and simmer for one hour over low heat, stirring occasionally.
    7. Add the chicken and cook for approximately 20 minutes or until cooked through.
    8. Prepare noodles according to manufacturer's directions and serve.
    9. Leftovers can be frozen, but freeze sauce separately.

This recipe is popular in my house. I double the recipe & transfer half to a casserole dish for freezing. It is delicious on a chilly day.
thanks so much for posting this Loocie, looks really good and healthy.

Tonight we made rotisserie chicken, mashed potatoes, gravy and carrots. Save 2 pieces of chicken for wraps for DS's lunch tomorrow.

made room in the freezer today by clearing out the romas and getting sauce made. While that was simmering all day I got busy making meatballs, I used some honey garlic sausage meat ( removed the casings ) mixed with the extra lean beef, got 25 fairly large meatballs. Boiled up 2 boxes of rainbow coloured Penne.
Cooked up 2 bags of the frozen perogies, as well as these interesting GT pork ribs ( Brand name 44th Street and the sale price was $7.00 for a 600 gr box ) First time I've bought these and Wow! the guys could not believe how tender they were and great flavour too.
The Jays blew it so I came up after the 3rd inning and started with the sauce, mixed up the Penne, made a large lasagna and froze the remaining in containers. Let's hope no one asks " is there anything to eat ? " I might lose it!

We had a combination of Stouffer's lasagne, Schneiders sausage, home made coleslaw, cut up farmer's market baby carrot (our 3yr old prefers to eat it this way), and milk.
