    Chinese hekka casserole - I like that I can kinda cook on weekends because I have a helper!

    I had chopped ingredients and assembled almost everything, husband had to just sautee ground beef and onions to add to all the veggies in the big roaster.
    In a smaller roaster, got rice ready to bake, because the timing of the two dishes was similar.
    I went to put my feet up, only to hear exclamations coming from the kitchen. The water had all leaked out of the small roaster with the rice, and husband noticed because it leaked out down to the floor.
    So transferred rice to a pyrex casserole dish, added water, husband had already cleaned up so everything went into the oven.

    The roaster was one of those black enamel ones, so I just assumed it leaked from a chip, but there was a teeny round hole on one of the sides near the bottom. Crazy!

    oh brother!! @Natalka who would have thought a black enamel roast pan would have a hole like that? I use my larger one for just about everything ( including on the stove top to brown and stew large things ) Good thing DH was near by and cleaned up the mess.

    Last night noticed the last bag of coleslaw was " just about to turn " , so I rinsed it all under cold water, spun it silly in a salad spinner and used it in a stir fry. Added diced leftover roasted chicken breast, green onions, broccoli, slivered almonds, and did it up in the wok with drizzles of sesame oil.
    It made enough to share, good thing as DH sniffed around saying " that smells good! "

    The bugs were starting to bite up north so we came back a little bit early.

    We brought back some leftover steak from last night so will reheat that and add some potatoes and the corn on the cob we also brought back

    Victoria Day seafood grill, including tiger prawns,giant scallops with chimchurra I made this morning and crab legs with garlic butter. Baked potatoes and grilled veggie salad for sides. Strawberry shortcake for dessert that my gf is bringing. Lots of beer and rose.

    I made this pasta dish recipe I found on the internet--its EXCELLENT--it makes A LOT and its very filling (next time I will just 1/2 the recipe)

    I just used ingredients I had on hand (used rotini instead of bow tie pasta, used sweet thai chili sauce instead of chili sauce and used few dabs of tabasco sauce instead of sriracha sauce)..
