    Leftover chicken noodle soup, then husband will eat the dark meat. I had roasted the breast from the chicken, so will have some on a bagel.

    Yesterday Mom's plan changed and instead of being her first stop Costco was her last stop so she grabbed a chicken which we had with new potatoes done in the Instant Pot with Garlic Herb Butter and a Kale Salad

    Tonight I am on my own so think I will have the left over potatoes from last night, left over Roasted Cauliflower from the weekend and a Sausage for protein. I must admit lately I am all about the sides but the protein tends to be my issue lately. Going to have to work on this.

    First time trying Opa! I had the platter with shrimp (5, but they were juicy good), Greek salad, rice (wish I knew how they made it), half a roasted potato (no clue why this was there), pita and tzatziki (both awesome).
