    Tonight is a mystery but Mom is off so I am hoping she plans dinner and I can just go home and eat.
    Tell me about those Caprese mushrooms! It sounds so good!

    Last night we ended up making the charcuterie board for dinner with fresh peach ice cream made in the vitamix for dessert. I’m going to the fish market this morning, whatever looks good there will be dinner tonight.

    I got fresh wild salmon at the fish market this morning. Local new potatoes with dill and fresh corn as sides. I’m marinating the salmon in a soy maple garlic sauce.

    Caprese Mushrooms are Portobellos Cleaned and brushed with Garlic Butter inside and out (I use the mix I use for garlic bread which is butter, garlic powder, Italian Seasoning and Parm Cheese) then you fill them with grated mozzarella, some fresh basil and slices of Grape tomatoes. You them place them under the broiler until cheese is melted and mushrooms start to soften but be careful as the mushrooms will start to burn on the top edges.

    We went grocery shopping last night so tons of options but dinner but so so tired so we just had Sausage on Bun with some Chips

    My wife and daughter had spaghetti last night so I used some of the leftover sauce and put it on a couple of buns I had in the cupboard. I put a little bit of cheese on top and it was actually pretty good. I am also looking forward to a ice cream cone later

    We have a lot of veggies that need to be used up so I think Stir Fry is the best option so going to make a Beef Stir Fry with Snow Peas, Bok Choy, Cauliflower, Mushrooms & Peppers which will be served over Rice
