Last night we ended up having Swiss Chalet, forgot it was Wednesday which meant the Fish & Chip place was closed.
For tonight I am thinking of keeping it simple by making Tortellini in Classico Roasted Portobello Mushroom Sauce with Garlic Bread.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

I pulled a bit of a fast one last night. I had 2 lbs of sausage that had a bit of freezer burn taste but was perfectly fine otherwise. So I ground up the sausage, laced it with garlic and a lot of onion, fried everything up and threw in a handful of spices, two cans of tomato sauce and two cans of mushrooms to make spaghetti sauce. Served with a layer of parmesan...and it was delicious. But I have to be more careful to rotate things in the freezer. This evening is a rerun of spaghetti (with a salad) because it is DH's fav dish and he could eat it happily for several days in a row.

My sister is hosting our aunts 85th birthday so i imagine it will be along the lines of lasanga or chile etc etc. My brothers are also going so should be a good time.

^Nothing beats family get togethers! enjoy... Today will be pan fried NL cod fillets (from last summer's food fishery) boiled potatoes, homemade pickled beets, etc

I just picked this up from the library....I am not on a Keto Diet ( it conflicts with Dr. Poon ) but there are parts of that diet I do enjoy!!
Just going to leaf through this and see if there is anything I can use from it. Hey @Lynn49 if I see any yummy appy's I'll let you know!

Last night I used some leftover Taco Meat from the Freezer to make Nachos. We had Nacho with melted Cheese, Homemade Taco Meat with toppings of choice.
Tonight so far is still a mystery, I am really looking for a nice Dinner tonight, lately it has been a lot of quick fixes or Take-Out and I am missing a nice meal.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Tonight will be Roast Beef, Mashed Potatoes & Gravy. As for the veggies I need to clean out the fridge and use whatever needs to be used up. I am pretty sure I have a Cauliflower and maybe some Brussel Sprouts, not sure if there is anything else in the fridge but if there is I will include it in tonight's meal.

@Thatdone Cooks hams are my favorites! Tonight I need to be lazy in the kitchen because too much time is demanded elsewhere. I bought a Marc Angelo port loin stuffed with Applewood sausage at Freshco yesterday where it was marked down from $12 to $7. Some bistro Uncle Ben's rice and a salad with just dressing on it.
