..picked up some yummy beef short ribs at the grocery store this morning, so have those marinading now and will cook under the broiler later...we have a storm approaching so hopefully we don't lose the power if so will have to cook on the wood stove....and baked potato and caesar salad...although I might ditch the potato and just have fresh dinner rolls...

Its a beautiful day here on the rock!! getting ready to spend the afternoon snowmobiling ...will either stop somewhere on the way for a bite to eat...or p/u something simple to heat at the cabin ...

Things did not work out for dinner last night as the person setting up my oxygen equipment was here untill really late so we just made sandwiches
So toinight will be

Tonight I cook and fill the fridge for my hungry boys and hopefully it will last till Friday! Will be hitting the freezer on the bottom of the fridge and see what treasures I find (I saw cooked chicken so will defrost that and make DS chicken fried rice for his school lunch )

On my own this week, so eggplant parm is my side of the week, LOL
Baking a stuffed chicken breast and will fry up some greens to go along with it.

Last night I made one pan Fajita Bowls, you bake the whole dish in the oven and it has Rice, Chicken, Peppers & Onions seasoned with a homemade seasoning mix. I also added mushrooms as we normally put those in our fajitas. It was really good, I just need to adjust the level of spice as it was a bit too much even though I did already cut it back from the original recipe. A few tweaks and I will have it.

I am going to the pub for wings around 4PM, so I figure that will be dinner.
Lots of leftovers for a snack later too.

Decided on Spaghetti with Meatballs, using homemade Meatballs from the Freezer and a Jar of Classico Sweet Basil Marinara. Will also make Garlic Bread and a Cesar Salad to go with it

..yesterday I cooked a pork roast with mashed potatoes, asparagus, etc...there's a lot of pork roast leftover so will make something from that but not exactly sure what that will be...maybe pulled pork sandwiches & fries or I might try a cabbage/rice pork stir-fry
