I made Burritos using some leftover rice/tomato and ground beef mixture from stuffed peppers. Added refried beans, burrito seasoning filled the wraps, baked in the oven and they were great. Super filling

Our DS cooked this entire meal.
Neither DH and I were allowed anywhere in the kitchen until he was finished!
Dinner is served!

ha ha ! @Thatdone Yours is the 2nd such request to have our DS cook for them....ty very much, I'll pass the compliments on to him. This really boosted his confidence about cooking. He went deep on research and methods to make his and my steaks medium rare ( and medium to well done for DH ).
I've never made roasted spuds this way.....imagine me second guessing him? Lesson learned and now i will peobably make mine this way from now on. ( old dog, new trick! )

Yesterday I made a pork stir-fry with lots of veggies served over rice, there's lots leftover so will probably be that (maybe add spring rolls). I have a chicken in the fridge thawing that I took out yesterday for today so that might have to be for tomorrow. I made blueberry muffins yesterday and forgot to add the oil that was sitting next to the bowl, hahaha, they're still edible but missing "something"

@SnowFlakey do you recall the fab half off sale on roasts I bought from Metro a few weeks ago? DS took one of the smaller ones and sliced 4 thick steaks from it. Talk about decadent! So juicy and flavourful. The items in the small white ceramic dish are sauteed mushrooms.....cooked slow and in butter till they browned up dark.
A person could get used to being cooked for......ha ha
Wonderful news about your DD's recovery!!

Mom has a curbside pick-up this afternoon so I suggested we should have Take-Out tonight. We have severely cut back out take-out which I am happy about but a night off right now sounds amazing, no cooking, no cleaning although I have noticed even when we do not cook our kitchen still needs to be wiped down but a night off sounds amazing.
