    For tonight we have decided on Steak Sandwiches with Homemade Potato Wedges and I am going to make some sort of Salad using some bits and pieces from the fridge.

    Yesterday I ended up making codd rolls (with hot dogs bread,mayo,tomatoes,english cucumbers,iceberg lettuce)
    for dinner tonight it will be sausages with something else as a side..need to figure it out
    Black forest cake for dessert
    TGIF and happy long week end of easter!!!!
    The goal is to live day by day not to much thinking hahaha !!!!

    DH and I put our brains together last night and decided upon a pork loin thing for an Easter dinner, so I'm making up both a Sweet Tea brine to marinate it in and then a Dry Rub.
    The Sweet tea marinate will be approx. 6 hrs. in the fridge, then the dry rub goes on, 2 more hours resting in fridge, then slow cooking in a low oven, then a searing in a cast iron pan on all sides.
    Last step is pouring the bourbon sauce over.
    Quite the process....well there is nothing else going on, we're in another lock down.

    Not sure about tonight-maybe Chinese takeout. Tomorrow will be Ham, Potatoes Romanoff, kale salad, baguette and homemade pumpkin pie courtesy of DH. Leftovers for a couple of days after that!

    Woke up with an odd craving today, I wanted Pizza but just Pepperoni and Cheese, I want nice crunchy, crispy pepperoni. I think it is because like once maybe twice a year I will treat myself and run out at work and grab a slice but not working in the office no treats so maybe that is why the craving came on.

    So homemade pepperoni pizza with a ceasar salad.

    I searched all the old threads hoping to find one that had been created for posting desserts on. No luck and I am simply bursting at the seams ( or I will be once I've eaten my fair share of servings from this Trifle ) to post this Easter Trifle!
    It only started out as a " junk trifle " meaning whatever I could find in the stockroom/freezer/cupboards to layer it with, but before I knew it I had a theme!

    I really wanted today fresh salmon and chinese rice..but I remebered I had purchased yesterday sushis shrimps spring rolls and salmon poke bowl in marche public at a new store so the salmon will wait and I will have those things...After I will be drolling lol!!!! Happy Saturday!!!

    i got a tray of rib eye steaks on sale at rcss 30% off regular price, so hubby will cook them and i'll make the sides: asparagus, baked potatoes, sautee mushroom and mac 'n cheese. So the little ones have some choices but they will go for the mac 'n cheese for sure.

    ALL that work, the time spent waiting for the marinade ( I let it go for 20 hours! ), then another 3 hours in the dry rub, but it was all worth it.

    This is all that is left now.....we polished off one full slab of slices. The bourbon reduction ( sauce ) complimented the chili powder heat. Sides were steamed chunky thick sliced carrots and Stove Top Stuffing.

    Had a change of Dinner plans, we were not that hungry come dinner time so instead of the dinner we had planned we opted for Breakfast for Dinner and made Homemade Waffles.
