    Tonight will be Lemon Pepper Air Fryer Chicken with Mixed Air Fryer Veggies, I have a bunch of Veggies to use up so I will create my own mix and will add some herbs and spices. Also thinking of Potatoes on the side, I have some to use up, I am thinking of just making boiled potatoes with some Butter and Herbs.

    Vegan 'Meaty Beany Chili' and cornbread muffins, both from the Isa Does It cookbook (highly recommend). I used fresh jalapeños from my garden.

    Pan-fried two bison burgers in 1 tbsp of herbes de Provence & 1 tbsp smoked paprika. Added some leftover rice, canned diced tomatoes (about 4 tbsp of tomatoes and 3 of the liquid) and 1 cup of frozen mixed veggies after turning patties over for the second sides to cook.

    Had a cold can of pear-peach La Croix sparkling water and freeze pop for dessert. That was the last of the PC Black Label smoked paprika! Best spice ever...

    I was out of town for work yesterday (just a day trip) when I got home we had BBQ Chicken Caesar Wraps with Homemade Fries in the Air Fryer

    I've pulled 2 items from the freezer to thaw. A tray of homemade sweet potato/ricotta cannelloni and a tray of skbn chx thighs.
    The cannelloni just need to sauced and baked, but the thighs will be sliced, threaded onto skewers, grilled and then served with a peanut sauce. ( Chicken Satay )
    Garden salad as a side.

    We nixed making a salad, which would have been too filling for the one meal. As it was I could only manage a single cannelloni because the satay and the peanut sauce were so darn delicious.

    Last night we kept it simple with Bacon & Tomato Sandwiches, nothing screams summer like Bacon & Tomato Sandwich for dinner, they were a staple growing up.

    I had some leftover Potatoes in the fridge I tossed into the Air Fryer to Crisp them up and they came out as perfect Hash Browns

    Last night we took out homemade burgers and were going to make homemade Fries in the Air Fryer but Mom was not hungry so I had French Toast instead.

    Now tonight will be Homemade Burgers with Homemade Fries in the Air Fryer and thinking a Cucumber Salad as I am out of lettuce and highly doubt I will find the time to run the store today.

    Happy Friday everyone! Yesterday it was so cool I cooked a roast, so there's leftovers for today & gravy, etc so will turn it into hot sandwiches and fries in the air fryer, etc

    I made a rich stew Wednesday afternoon ( blade steak and meat from beef ribs ) , added the usual carrot, onion. a few diced spuds and thick sliced cremini mushrooms and the shrooms stayed medium/firm even after their time in the pressure cooker. Stew was served over Basmati rice.
    The last of the stew is today's lunch, then a big salad for dinner.

    I'm thawing a bag of 1" thick basa steaks for Saturday. They'll be in foil on the BBQ. Sides will be roasted veg. Sweet potato, bell pepper, zucchini and carrots.

    The stew didn't stretch quite as far as we'd liked, so I made up 20 pork/veg spring rolls. I was so happy to find a package of the wrappers in the frozen section at NF last week with just 20 in it. Used to be they only had the 50 pack....too many for me to make and roll at one time.

    My meal plans for this week.
    Today we had baked chicken breasts, garden salad, French fries with home made gravy.
    Monday home made meatballs glazed, masked potatoes, garden salad, and steamed California mixed veggies.
    Tuesday use the leftover mashed potatoes to make 2 shepherds pies. We’ll eat the second one another night.
    Perogies, smokies, mixed veggies.
    Fish sticks, French fries, tossed Salad with carrot sticks.
