    We've all been bouncing between the cabbage rolls, the stuffed peppers and the cooked burgers ( DH did a batch up late on Monday night ), oh yes and eating up the rest of the assorted roasted veggies.
    I found this funny, so I'll post it here.
    On Tuesday I diligently peeled, then boiled half, roasted the other half of a 5 lb. bag of carrots, so what do you think was the free product giveaway today at NF? Yup a 2 lb bag of carrots....bwahahaha

    Decided i had a rough few days (took in a lot of info about my grandchild) so fortinos wings and fries and a side salad it was used $20.00 in P.C points to make the deal sweeter.

    Yesterday I wanted something easy and quick so I grabbed a greek pizza with greek patatoes at IGA.It was very tasty

    between midnight and 2 a.m. I did up a roast pan of Marc Angelo Mild Italian sausages ( just 6 of them cut into coins ) , added onions and baked at 410 degrees for 40 min. Then tossed in par deep fried chunks of spuds and cooked another 35 min.
    It is what we call a potato sausage casserole.

    Sounds like they are getting shortchanged but I modified the recipe a smidge. I sliced through the middle of the chop, S & P and pan seared the outsides only, then placed a crazy amount of stuffing into the middle, tied it up and finished it in the pan in the oven.

    Both proteins are done and wrapped up in the fridge, sides I'll do closer to dinner.

    I have some Zucchinis I need to use up and normally I would make Zucchini Lasagna Roll Ups but they are time consuming and there is no way I can stand that long right now.

    So I am trying Zucchini Lasagna Boats again, I liked them last time but Mom was not sold. She said they were too crunchy, so this time I salting them before I bake them and will bake an extra 10 minutes before I add the filling.

    On the side I will make Cheesy Garlic Naan and Caesar Salad

    The guys complimented the way I stuffed the pork chop, ( presentation ) and the ceramic serving dish held 2 layers of slices. All the fixings that accompanied it were more than enough to satisfy.

    A friend of mine says she always slices up a cooked chicken breast as most people don't take a whole one if it is sliced-apparently the same for sliced, stuffed pork chops-very clever way to stretch things out for the meat eaters.

    ty ladies! We both came from larger families and stretching recipes became a valuable tool in reducing the grocery bills for our parents. I am still just so tickled that it worked out as nicely as it did.
    Hmmmm, now what will I make for tomorrow? lol
