    Tonight we are trying Slow Cooker Chicken Pot Pie, I prepped everything but the potatoes yesterday, so I can just dump everything in the Slow Cooker on my lunch break. I liked this recipe because you make the sauce using a roux and not cream of soup. I even made the sauce yesterday so it is ready to go.

    You are supposed to server biscuits on the side but not the biggest fan of biscuits so I made Dinner Rolls yesterday to serve with it.

    ..roasting a chicken, fries, dressing & gravy and probably roasted carrots..made a large batch of meatballs this morning. Usually I make honey garlic but going to freeze them plain and use them for spaghetti or make the honey garlic sauce later...

    It is a little cooler, snowier and drearier today so I am going to whip up a beef stew-I found one small, lonely piece of beef in the freezer so perhaps I should call it veggie-beef stew.

    I’ve been on a quesadilla roll lately. It’s a great way to use leftovers.

    I made a potato,black bean and just egg scramble for breakfast on Sunday so I made it in to a quesadilla for dinner and today’s lunch was a pizza one with the leftover pizza fixings from earlier in the week.

    Still up in the air atm. Might be a 1/2 an apple ( slices ) spread with a tblsp of Jif Dark Roast PB.
    2 cups of steamed savoy cabbage ( and trust me I'd love to butter and salt it but I won't )
    5 more of my cute pizza dough circles brushed with Passata, sprinkled with Italian seasoning and garlic powder, then scant bits of grated Mozz melted over that.
    If I am still peckish I reach for the cucumber and celery sticks.

    Still in toothache town, but slowly a bit of relief as the antibiotics get going and the odd pain pill to get me through.
    For Thursday's dinner I finished off the sweet potato soup, laid out 8 Tostito Scoop shells, divided 1 oz. of sliced up bits of Bocconcini cheese into them, after melted, topped each with a ground turkey/salsa/taco mixture.
    1/2 apple with 1 tblsp PB, 1/2 naval orange, 1/2 mini cucumber.
    Afterwards 2 no sugar added Jello cups.

    Today was one of those uggg we have to have dinner tonight, types of nights. Did not really feel like cooking so keeping it simple with Steak Sandwiches and Homemade Air Fryer Fries

    It’s been crazy here with work and stuff but I managed to get one pic of a dinner. I made a vegan chilli by making the “meat” base using mini portobello mushrooms, cremini and white. Sooooooooo good.

    This week consisted of leftover chili, creamy corn on green onion noodles, and gardein “fish” tacos with homemade tarter sauce. All plant based obviously

    Last night was simply Mexican sliced roasted yams, onions and broccoli with jasmine rice and garlic Caesar tofu. Not sure about tonight……….

    Today and tonight is ALL about the hockey! Ron Maclean did a spot last night on Tim & Friends about Scarborough!!

    I nearly forgot to post what I made for our day of sittin and watchin.
    Pork ribs with almost ALL the fat removed. First a rapid boil of the 2 slabs to soften, then cut into 1 rib bone pieces that I laid on top of a wire rack so they could drip into the roast pan.
    Shakes of dry herbs, in at 400 degrees for 30 min. , flip over herb the other side, another 30 min. Last 20 min just to make 'em nice and crispy.
    Drool.
    Sides are a small potato salad, large tray of cut raw veggie sticks, bowl of sweet seedless peeled and sectioned naval oranges.

    Awesome enjoy walkonby! Thanks so much for posting your recipe. I'm heading out to Independent (Loblaws) to pick up some up some ribs next week.

    Dins tonight for us a repeat of homemade fried wontons and wonton soup, brown rice and small stir fry with bok choy, carrots and homegrown beansprouts. Dessert, homemade banana muffins
