We eat Cheese like crazy!!! lol (5 kids with daycare lol) I find this cheese freezes well for cooking. But not great for slicing & eating as it tends to crumble. Imo though!

I got a great idea from savingmoola about freezing some cheese when you get a lot. Try shredding it and then freezing it spread out on wax paper. When it's frozen solid then put it loose into Ziploc bags and back in the freezer. That way you can pull out just the amount you need for cooking or whatever.
