Stella's Famous Apple Squares
Dough:
1C oil
3/4C white sugar
2t vanilla
2 eggs
2T baking powder
3C flour
Mix the 'wet' ingredients in a measuring cup (start with the 1C oil), and stir together well. Add to dry ingredients in a bowl. Mix and divide in half.
Pat half the dough into an 8x11 cake pan.
Filling:
5 McIntosh apples, cored, peeled
1/2C sugar
2t cinnamon
1/2 Lemon: juice it, and add grated rind
1/2C (approx) strawberry jam (I've also used seedless raspberry jam)
Using a coarse grater, grate the apples over the dough base.
If you don't have a coarse grater, slice thinly and spread over dough. Don't be neat...messiness just adds to the texture! Sprinkle with remaining filling ingredients except the jam.
Then GRATE the remaining dough over the apples.
Now. This requires a coarse grater (mine has openings approx 1/2" wide).
If you don't have this, just peel off bits the size of flat almonds and toss over the apples, covering them completely. This creates a lumpy topping that gets deliciously crunchy when baked, so don't pat anything down..it should all sit on top loosely.
Over this, plop bits of jam so that it's fairly evenly distributed over the dough topping.
Bake @ 350 for approx 1 hour. Check after 45 minutes, as oven temps vary, but it should be a medium brown on top...not pale like a pie.
Remove from oven, and let sit until you can't stand it any longer, and enjoy!!
This keeps very well, and can be frozen ahead of time, prior to baking, then baked from frozen. I've never been able to accomplish that, but I've heard it is possible. :cheesygrin:
