Chicken Fritatta
Serves 4
30 minutes preparation
Ingredients:
1/2 cup sliced green onions
1/2 cup fresh or frozen corn
6 eggs
1/4 cup milk
1/4 teaspoon salt
9 oz. cooked chicken strips
1/2 cup Colby-Montery Jack cheese blend
1/2 cup Victoria salsa
Directions: Spray large nonstick skillet with nonstick cooking spray. Add onions and corn; cook over medium heat for 3 to 5 minutes of until corn is crisp-tender, stirring occasionally. Meanwhile, in medium bowl, beat eggs. Beat in milk and salt. Add chicken to mixture in skillet; mix well. Spread mixture evenly over bottom of skillet. Carefully pour egg mixture over chicken mixture. Reduce heat to medium-low; cover and cook 8 to 10 minutes or until center is set, lifting edges occasionally to allow uncooked egg mixture to flow to bottom of skillet. Sprinkle frittata with cheese; cover and cook 1 to 2 minutes or until cheese is melted. Cut into wedges. Serve with salsa.

Chicken Wrap
Serves 4
5 minutes preparation time
Ingredients:
1/2 barbecued chicken
1/2 cup mayonnaise
1 Tbsp. lime juice
1 Tbsp. VICTORIA Chopped Garlic
1 cup VICTORIA roasted red peppers, drained
1/2 red onion, diced
4 pcs. Lavosh bread (wrap)
Directions: Remove skin and bones from barbecued chicken and shred the meat. Combine the mayonnaise and lime juice with chopped garlic in a small bowl. Spread mixture over the lavosh bread. Add shredded chicken. Top chicken with thinly sliced roasted red peppers and diced onion. Roll up and serve either sliced or wrapped in paper.

Honey Dijon Fish Sandwich
Serves 4
30 minutes preparation time
Ingredients:
1/2 cup milk
1/2 cup bread crumbs
4 white fish fillets
3 tablespoons VICTORIA extra virgin olive oil
2 tablespoons butter
8 slices pumpernickel bread
4 slices swiss cheese
3/4 cup sauerkraut
1/2 cup honey dijon salad dressing
Directions: Place milk in shallow bowl; place bread crumbs on shallow plate. Dip fish fillets in milk; coat with bread crumbs. Heat oil in large non-stick skillet over medium-high heat until hot. add fish; cook 6 to 10 minutes until fish flakes easily with fork, turning once. Remove fish from skillet; place on plate. Drain and discard oil from skillet. Spread butter on one side of each slice of bread; place 4 slices, buttered side down, on work surface. Top each with cheese slice and fish fillet. Top each with sauerkraut and salad dressing. Cover with remaining slices of bread, buttered side up. Heat same large nonstick skillet over medium-low heat until hot. Add sandwiches; cook 6 to 8 minutes or until bread is browned and cheese is melted, turning once.

Mexican Tortilla
Makes 12
40 minutes preparation time
Ingredients:
1 lb. fresh ground chicken or turkey
1 jar VICTORIA salsa
2 cups shredded cheddar cheese
1/2 cup raisins
1/2 cup VICTORIA stuffed manzanilla olives
12 flour tortillas
3/4 cup sour cream
Directions: Heat oven to 375º F. Brown ground chicken in large nonstick skillet over medium-high heat for 6 to 8 minutes or until no longer pink, stirring frequently. Drain. Add salsa, 1 1/4 cups of the cheese, raisins and olives; mix well. Cook 1 to 2 minutes or until thoroughly heated, stirring constantly. Spoon 1/3 cup chicken mixture down center of each tortilla. Fold each tortilla over; secure edge with toothpick. Place on ungreased large cookie sheet. Bake at 375º F for 6 to 8 minutes or until edges of tortilla are golden brown. Cool 1 minute; remove from cookie sheet. To serve, remove toothpick from each tortilla. Top each with 1 tablespoon cheese and 1 tablespoon sour cream.

Beef and Spinach Enchiladas
Serves 4
25 minutes preparation time
25 minutes cooking time
Ingredients:
1 lb. lean ground beef
2 tablespoons VICTORIA chopped garlic
1 1/2 cups frozen cut leaf spinach
4 oz. cream cheese, cut into cubes
1/2 teaspoon VICTORIA cumino
1/3 jar VICTORIA sliced jalepeno peppers, chopped
2 cups shredded montery jack cheese
8 flour tortillas
1/2 jar VICTORIA marinara sauce
1 jar VICTORIA salsa
Directions: Heat oven to 375º F. Spray 13 X 9 inch glass baking dish with nonstick cooking spray. In large skillet, cook ground beef and garlic over medium-high heat until thoroughly cooked, stirring frequently. Drain. Add spinach; cook 3 to 5 minutes or until spinach is thawed, stirring frequently. Reduce heat to medium; stir in cream cheese, cumino, peppers and 1 1/2 cups of the cheese until combined. Spoon about 1/3 cup of beef mixture down center of each tortilla. Roll up; place seam side down in sprayed baking dish. In medium bowl, combine tomato sauce and salsa; mix well. Spoon over tortillas; sprinkle with remaining 1/2 cup of cheese. Bake at 350º F for 20 to 25 minutes or until thoroughly heated.

Chicken and Feta Salad
Serves 4 to 6
10 minutes preparation time
Ingredients:
12 oz. VICTORIA Marinated Artichoke Hearts
4 oz. VICTORIA Marinated Mushrooms
2/3 cup VICTORIA Sun-Dried Tomatoes
1 red onion, cut into rings
1/4 cup basil Leaves, slivered
1 barbecued chicken
5 oz. arugula leaves, trimmed
6 oz. feta cheese, cubed
Directions: Place marinated artichokes with oil in a bowl and add mushrooms, tomatoes, onions and basil. Remove skin and bones from chicken and cut into bite-sized pieces. Add to salad and toss well. Season to taste. Arrange arugula leaves on a serving plate and top with the salad. Sprinkle crumbled feta cheese on top and serve with crusty bread.

Herbed Lamb Salad
Serves 6
5 minutes preparation time
20 minutes cooking time
Ingredients:
4 tablespoons VICTORIA Extra Virgin Olive Oil
3 eight ounce lamb tenderloins
1/2 small head red cabbage, shredded
1 tablespoon caraway seeds
1 tablespoon chopped fresh rosemary
2 tablespoons VICTORIA pignoli nuts
1/2 cup VICTORIA Aged Balsamic Vinegar
Directions: Preheat the oven to 350º F. Heat 2 tbsp. of olive oil in a skillet. Add the lamb and cook over high heat for two minutes on each side. Place the lamb on a wire rack in a roasting pan and bake for 5 to 7 minutes. Remove from the oven and rest for 10 minutes. Place shredded cabbage in a salad bowl, pour on balsamic vinegar and remaining olive oil and mix together well. Add the caraway seeds and rosemary and toss. Cut the lamb into 1/2 inch slices and arrange over the cabbage. Sprinkle with pignoli nuts and serve immediately.

Greek Village Salad
Serves 6
15 minutes preparation time
Ingredients:
6 tomatoes, cut into wedges
1 red onion, cut into thin rings
2 short thin cucumbers, sliced
1 cup VICTORIA Calamata olives
7 oz feta cheese
1/4 cup cup VICTORIA extra virgin olive oil
Salt and Pepper VICTORIA oregano, to sprinkle
Directions: Place the tomatoes, onion, cucumbers and olives in a large bowl and mix together. Season with salt and pepper. Break the feta up into large pieces with your fingers and scatter over the top of the salad. Drizzle with the olive oil and sprinkle with oregano.

Cooking and recipe freebies..... Recipe booklets that are sent to your house and the like... All online freebies (eg. searchable enginges, programs and printables) in the online sectino... if you have a few favorite recipes, since that is not a freebie so much as a single recipe, they are approp. for the recipe thread in the tea room (loved the ones you already posted!)... helps to keep the forums neat and clean for people looking for freebies.

Thiknking I might move them all to the same section so I can merge them... then will figure out what section they fit into... is a tough decision, they don't really easily fit into any of the categories we have here.
