    Ukrainian Round Steak

    This crock-pot recipe is a quick and easy meal that feeds six people. It takes only five minutes to put the meal together in the morning and you don’t need to defrost the meat before putting it in the crock-pot. It’s great over rice, but you can also shred the round steak and pour the meat and sauce over egg noodles.

    Ingredients


    • 1 – 2 lbs. Frozen Round Steak – No need to defrost
    • 1 small onion diced
    • 2 cans diced tomatoes
    • 1 ½ Tablespoons Spice House Ukrainian Village Seasoning (You can purchase it on line at The Spice House) or add 1 Tbsp. Oregano , 1 Tbsp lemon , 1 tsp Garlic Powder instead of the Spice House blend.
    • 3 cups cooked rice or 1 bag of egg noodles

    Method


    1. Add diced onion to the bottom of the crock-pot and place the frozen Round Steak on top of the onions
    2. Add the two cans of diced tomatoes over the Round Steak
    3. Add the Ukrainian Village Seasoning over the tomatoes
    4. Set the crock pot to 7.5 hours and enjoy the day
    5. Before you are ready to eat, take the meat out of the crock-pot and skim the fat off the top of the sauce that is created through the cooking process. This step is important or your sauce will be greasy.
    6. Serve over rice or egg noodles

    I was out early today to take my kids to their first karate competition (Crispin Shiai) in Acton.

    My kids had a fantastic time and did pretty well. My son won a second won 2nd place in sparring, 3rd place in weapons and 5th place in self-defence and his kata.

    My daughter won 1st place in weapons and self-defence, and 2nd place in her kata and sparring.

    Well, if we are going old world recipes, this one of my favourites as a kid (with a little twist) that my Granndmother used to make.

    Rouladen
    4 very thin six-ounce beefsteaks, flank steak or top butt
    1 tablespoon of German or Dijon mustard
    2 large dill pickles cut in half lengthwise
    1 onion sliced very thinly into rings
    4 strips of bacon
    1/2cup of red wine
    1-1/2cups of beef broth
    1 bay leaf
    1 tablespoon of cornstarch
    2 tablespoons of water

    Lay the steaks on a flat surface and brush with the mustard; lightly sprinkle each with salt and pepper. Lay a slice of bacon on each steak. Layer the onions evenly onto each steak and top with the pickle slice. Fold two opposing sides of the steak in towards the center about one inch or so forming a roughly rectangle shape. Roll into a tight cylinder and secure with a toothpick or two or butchers string. Repeat with the remaining three steaks.

    Brown the rouladen in a thin layer of vegetable oil in a thick bottomed sauce pot that’s just big enough to hold all four in a single layer. Brown evenly on all sides. Use additional oil if needed and when done discard all the oil.

    Add the wine, beef broth and bay leaf to the pot. Bring to a simmer and braise with a tight fitting lid over a low heat for one and a half hours or until tender. When done a thin knife blade should meet no resistance when poked into the meat.

    Remove the rouladen from the broth. Stir together the cornstarch and water then whisk into the broth until it thickens. Adjust the seasoning to taste. Serve immediately.
