Hey, i wasn't actually thinking i'd use this section, but then it came to me, that i have been searching for this recipe of something similar since I tasted this dish almost 4 years ago at Mr Greek Restaurants..
It was a chicken breast dishes in a cream sauce that had red peppers and feta.. it was soooooooo yummy, I've tried to find a recipe for this forever, I have tried many things but can't seem to find the right cream sauce to go with this..
I have even asked mr greek and they can't recall what was in it, and this was right after i had tried it 4 years ago.. SERIOUSLY no one knows?!
I just really want a recipe to bake with chicken breasts that is red pepers and feta?

Perhaps this one?
2 chicken breasts
2 + 2 tablespoons extra olive oil
1/2 cup chopped onion
3 garlic cloves, chopped
16 ounce jar roasted red peppers, drained and chopped shopping list
1/2 cup vegetable broth
1 cup crumbled feta cheese, divided
salt and fresh ground pepper
2 tablespoons chopped fresh parsley leaves
Pound chicken breasts flat season with salt and pepper.
In skillet place 2 tbs EVOO and fry over med heat chicken breasts slowly till cooked through. Set aside.
In same skillet heat 2 tbs of EVOO.
Cook onions till tender 5-7 min.
Add garlic cook 1-2 min.
Add the chopped peppers and cook until heated through.
Remove from heat and let cool slightly.
Place mixture in a food processor
Add stock and all but 2 tablespoons of the feta.
Process until combined and smooth and return to skillet to keep warm.
Slice chicken breasts in bite size peices and add to sauce.
Personally, I'd probably reserve some of the peppers and add them to the sauce after its been blended to add some interest and to see that there are peppers in there...I also might not blend in the feta, but just crumble it in after blending the rest of the ingredients...Last edited by Lynn49; Mon, Jul 5th, 2010 at 08:29 PM.

thanks ill try that one i want it to be sorta swimming in a cream sauce!
