this is a thread I thought I would never post in, but DD is following the Michael Thurman diet ( no dairy, no fats, no salt, no sugar) and the only carb she can eat of the " grains " is rice, so I have been trying to make her the odd little " fake " sweet treat to have in between, if she feels a weak moment.
So far I made 6 muffins using white rice flour, unsweetened applesauce, egg whites, blackberries, baking powder, lemon zest and granulated Stevia. Turned out pretty delicious! Then I made small " banana fritters " by mashing 1 banana, adding cinnamon and nutmeg, and enough rice flour to make 6 golfball sized things. Flattened them in the frying pan, cooked 3 min per side.
She approved!!

I found a good French stick recipe but I have not found a fab regular bread one!! Oh well.
Last week made 2 angel food cakes...they turned out great! No one knew they were gf!!

the only thing I changed is I used icing sugar(my first I found gritty from the sugar) And when I took it out to cool, I put a cup under the middle part of the pan to cool.

This is the French stick. It is best warm. I used egg replacer and vegan spread in place.

Morning everyone, I'm not sure if any of you have tried the Udi's brand of muffins and hamburger bund. I just tried them as I saw they were a new brand (to me) that they are carring at Sobey's. The bluebery muffins are to die for Very tender and moist, not crumbly at all. A bit expensive at $7.99 for 4 muffins (especially since I usually make my own) but I like to try anything new to see how many strides we are making towards actually edible gluten free products. The buns are also fabulous. I was really impressed and would definately purchase them again. Thank goodness for Rev Canada deductions for our gluten free food.

Rev Canada does not do mine cause mine is an allergy. Which is almost worst..I carry an epi pen!! Government!!
Yes Udi's is great! Very expensive but at least it is good!
I did not like the muffins but buns and bread are good
