Great idea for a thread; thank you!
My favourite quinoa salad is very similar, although I can't stomach cilantro (I keep trying; it doesn't like me!)
Ingredients:
3 cups cooked quinoa (1 cup dried)
1/3 cup freshly squeezed lemon juice (about 2 lemons)
3 Tablespoon olive oil
2 Teaspoon ground cumin
1 Teaspoon salt
1/4 Teaspoon sugar
1-1/2 Cup canned black beans, rinsed
1-1/2 Cup corn kernels (about 2 cobs) or defrosted frozen
1/2 small red onion, thinly sliced
1 Pint cherry tomatoes, quartered
1/2 Cup slivered almonds, toasted
1/4 cup chopped green or black olives
1/4 Cup chopped fresh mint
1/4 Cup chopped fresh coriander
Preparation:
Cook quinoa, according to package instructions.
While quinoa is cooking, whisk together lemon juice, olive oil, cumin, salt and sugar into a vinaigrette in a small bowl.
Combine quinoa and all remaining ingredients, except fresh herbs, into a medium-sized bowl.
Drizzle with vinaigrette. Toss to combine.
Refrigerate for at least one hour to allow flavours to combine. Add fresh herbs just prior to serving. May be served at room temperature.

I always swap the cilantro for parsley, and will sometimes omit the mint. This is always a big hit! :D

I also have a recipe to share. It came from Eating Well Magazine.
Quinoa Salad with Dried Apricots & Spinach
- 1 cup quinoa, rinsed until water clears.
- 2 teaspoons extra-virgin olive oil
- 2 cloves garlic, minced
- 1/2 cup dried apricots, coarsely chopped
- 2 cups water
- 1/4 teaspoon salt
- 2/3 cup Moroccan-Spiced Lemon Dressing, (recipe follows), divided
- 1 cup cherry tomatoes, or grape tomatoes, halved
- 1 small red onion, chopped
- 8 cups baby spinach
- 1/4 cup sliced almonds, toasted
- Toast quinoa in a dry skillet over medium heat, stirring often, until it becomes aromatic and begins to crackle, about 5 minutes. Transfer to a fine sieve and rinse thoroughly.
- Heat oil in a medium saucepan over medium heat. Add garlic and cook, stirring constantly, until golden, about 1 minute. Add apricots and the quinoa; continue cooking, stirring often, until the quinoa has dried out and turned light golden, 3 to 4 minutes. Add water and salt; bring to a boil. Reduce heat to medium-low and simmer, uncovered, until the quinoa is tender and the liquid is absorbed, 15 to 18 minutes.
- Meanwhile, make Moroccan-Spiced Lemon Dressing. Transfer the quinoa to a medium bowl and toss with 1/3 cup of the dressing. Let cool for 10 minutes.
- Just before serving, add tomatoes and onion to the quinoa; toss to coat. Toss spinach with the remaining 1/3 cup dressing in a large bowl. Divide the spinach among 4 plates. Mound the quinoa salad on the spinach and sprinkle with almonds.
Moroccan-Spiced Lemon Dressing
- 1/4 cup lemon juice
- 2 tablespoons nonfat plain yogurt
- 1 1/2 teaspoons honey
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 cup extra-virgin olive oil
- 1/4 teaspoon salt, or to taste
- Freshly ground pepper, to taste

i have only prepared it one way so far, but i find it becomes a nice alternative to rice if i do it this way. i tend to cook by 'feel' so i can write down approximate amounts. sorry!
for 1/2 cup uncooked quinoa i would use about 1/4 chopped veggies.
i usually use celery and onion. adding bell pepper or carrots would be really nice too.
first i saute a little bit of onion and celery (finely diced)
i add a little thyme, some salt and black pepper.
then cook the quinoa as normal, 1 part grain, 2 parts liquid.
i like using chicken stock.
i have had this with dishes where i would normally have rice on the side.

I tried this recipe for Quinoa Mushroom Pilaf over the weekend and I highly recommend it. On top of being light, it had lots of taste!

Wow this thread was such a great find. I just started eating Quinoa a couple months ago and was looking for different ways to cook it. I use it as a substitute for Cous Cous in my Taboule. I think it's delicious!
