    Upside Down Apple Gingerbread Recipe

    Ingredients

    1 1/2 c Margarine, melted 2 lg Apples, sliced 1 1/3 c Sugar 1 1/4 c Margarine 1 1/4 c Sugar 1 Egg 2 c Flour 1 1/4 c Molasses 1 1/3 c Brown sugar 1 ts Soda 1 ts Ginger 1 ts Cinnamon 1 ts Cloves 1 1/4 ts Salt 3 1/2 c Hot tea
    Instructions



    1. Pour melted margarine into a 9" dish & place apples in dish, sprinkle with brown sugar. Mix other ingredients together & pour over apples. Bake at 350 degrees about 45 min. Cool in pan 4 or 5 min., invert onto serving plate.

    Vegan Chocolate Sponge Cake Recipe

    Ingredients

    2 c Self-rising flour -(pref. 85% whole-wheat) 1/4 c Cocoa powder 3 ts Baking powder 1 1/3 c Vanilla sugar -OR- Superfine sugar 9 tb Sunflower oil 1 1/2 c Water Vegan margarine -for greasing ------------TO DECORATE----------------- 1 Qty. Chocolate Fudge Icing -OR- Chocolate Buttercream Dark chocolate -coarsely grated Confectioners' sugar -----VEGAN LEMON CAKE VARIATION--------- 1/2 c -additional flour 2 tb -Lemon juice 1 -Lemon, rind grated
    Instructions



    1. Preheat the oven to 325 F. Grease two 8- to 8-1/2-inch shallow cake pans and line the base of each with a circle of greased wax paper.

    2. Sift the flour, cocoa powder and baking powder into a bowl. Add the sugar, oil and water. Mix well to a batter-like consistency. Pour the mixture into the prepared pans and bake for about 40 minutes, until the cakes spring back to a light touch in the center.

    3. Turn the cakes out onto a wire rack and strip off the wax paper. Allow to cool completely.

    4. Sandwich the cake together with half the fudge icing or chocolate buttercream and coat the top with the rest. Sprinkle on a little grated chocolate and confectioners' sugar.


    Variation: VEGAN LEMON CAKE:


    Use the additional amount of flour and omit the cocoa powder. Replace 2 tb. of the water with lemon juice and add the grated lemon rind. Sandwich the cakes together and coat the top with lemon buttercream or fudge icing and decorate the cake with yellow sugar decorations and leaves cut from angelica.

    Walnut Raspberry Brownies Recipe

    Ingredients

    3 Squares chocolate - unsweetened 1/2 c Crisco 3 Eggs 1 1/2 c Sugar 1 1/2 ts Vanilla 1/2 ts Salt 1 c Flour 1 1/2 c Walnuts, chopped 1/3 c Raspberry jam
    Instructions



    1. Melt chocolate and Crisco over warm water; cool slightly. Blend together eggs, vanilla, sugar and salt; stir in chocolate mixture, then flour. Fold in walnuts. Turn into well greased 8-inch square pan. Bake at 325F for about 40 minutes. Spoon jam over hot brownies; spread carefully. Let cool.

    Zwetschgendatschi Recipe



    Yield: 1 batch
    Ingredients

    1/4 lb Butter 1/3 c Sugar 1/2 t Vanilla (or use -vanilla sugar) 1 Egg 1 T Sour cream 1 pn Salt (only if you -use unsalted butter) 1 t Lemon peel 1 3/4 c Flour 1 t Baking powder 2 c Italian plums -----OPTIONAL STREUSEL TOPPING---------- 6 T Butter 3/4 c Flour 1/3 c Sugar 1/2 t Cinnamon
    Instructions



    1. In a large bowl, cream the butter, add the sugar (and vanilla), add the egg, (salt,) lemon peel and sour cream. Mix the flour and baking powder and add that.

    2. Pit the plums, splitting them into halves or thirds. Grease the pan and spread the dough. Liberally spread plums over the dough, meat side up. If the plums are sour (as opposed to just tart), sprinkle them lightly with sugar.

    3. To make the optional Streusel topping, cream the butter, add flour, sugar and cinnamon. Sprinkle over the plums. Bake for 30-45 minutes in the middle rack at 375 degrees F. Be careful not to let the bottom burn!

    4. Serve liberally topped with freshly-made whipping cream.


    NOTES: A Bavarian plum delicacy for dessert -- My mother and grandmother make this Bavarian specialty without a recipe; this recipe is from my mother, after I pressed her to write it down so I could make my own. It also includes variations from a few other folks that you might like to try. Roughly translated from Bavarian to German, this is Pflaumenkuchen, which, roughly translated from German to to English is Plum cake. However, Zwetschgen aren't ordinary plums, a Datschi isn't really a Kuchen, and a Kuchen is most definitely NOT a cake!


    This dessert is made of the slightly tart Italian plums, which are unfortunately only available at certain times of the year. Don't try to make it with ordinary plums; they're too sweet and too juicy. Fills one round cake pan.


    * A Datschi may actually be made with any fruit; I happen to love it with Zwetschgen the best.


    * I don't know this with Streusel on top, and never prepare it that way, but several of my acquaintances swear by it. Made with other fruit, I would be more likely to accept the Streusel.


    * If you like, you may sprinkle rum or cinnamon over the fruit before baking. Also, you might try substituting rum for the sour cream in the dough, or just adding both.
