A large Shepherd's Pie!! The dish is baking right now.
I loved using up leftover things. Had HALF of a really large carrot (diced it up so small ), a cooked cob of corn in the back of the fridge that I stripped the kernels from, chopped up very small ( :hahaha: miniscule ) cloves of garlic that DH grew, diced and sauteed 2 onions near the bottom of the bag that would soon go along with diced mushrooms. Lean Gr beef was used and the mixture was completed with frozen green sweetlet peas, a can of beef gravy then topped with the creamiest mashed potatoes.
DH was kind enough to do the mashing, saving my wrist! :flowers:
There's a chance I'll have my serving as a late brunch instead of starving till 6 or 7 p.m. The guys may take their serving to work tomorrow, too hot today for S.pie.

A brownie baked in a cast iron pan! I'm not into brownies all that much but DS is!
The chopped up pecans and semi sweet chocolate spread on top of the batter made this extra delicious.

Exactly 24 hours ago I was up in the kitchen making stuffed green peppers. These are not your normal ones.
The filling is extra lean ground chicken, sauteed with small diced onions, mushrooms, bell peppers, carrots and
fresh basil and cilantro leaves. Stirred in passata, Selection pasta sauce, S & P along with 2 pouches of Konjac rice.
Filled the peppers ( 10 halves! ) and surrounded them in the remaining sauce and passata. Topped each pepper
with 1/2 slice of Swiss cheese. Baked at 350 for 45 min. They came out amazing.
Only 170 calories for half a pepper!

Making another batch of stuffed peppers. This time every colour of the rainbow got in the act.
They're baking right now so I've skipped what was planned as my first meal and will wait for these to finish up.

I don't usually buy fresh lemons even though I freaking LOVE to have them available " just in case ".
Too many have gone bad waiting for me to get inspired, BUT I bought 3 gorgeous ones 2 week ago
off the reduced rack ( $1.00 ).
I made THIS yesterday!! The EASIEST lemon pie ever! Uses an entire lemon, pith, peel, juice, only
the seeds have to be carefully removed before everything goes in the food processor. I used 1 & 1/2
lemons in it because they weren't really large lemons.
Arizona Sunshine Pie
Ingredients:
1 large lemon, quartered, seeds removed. 4 large eggs, room temp. 1/2 c. melted butter,
1 & 1/2 c. sugar, 1 tsp. vanilla extract, 1 single frozen deep-dish pie crust, unbaked.
Directions:
Preheat oven to 350°. In a high-powered blender or food processor, blend lemon, butter,
eggs, sugar and vanilla until smooth. Place pie crust on a baking sheet; pour filling into crust.
Bake on the middle rack until filling is puffed and golden, 40-45 min.. Cool for 1 hour.
Cover and refrigerate until set, 4 hours or overnight. Top with any whipped cream product.
We plan to have that as dessert after dinner tonight, but have not even decided what dinner
will be yet?? ha ha

It's cooling/hardening atm in my ice cold storage room ( BRRR! ). I'll break it up, putting the pieces into mason jars
for Christmas Day. The dessert part of the menu has not really been planned as some of us are NOT supposed to be
eating sugary treats. Others have partial dentures so chewing any hard foods is out. It can be tricky.
I bought these odd brand of Graham Crackers not aware how super thin they were. However, that may turn out to be a
happy accident as they may be a more delicate item to bite down on.

Ground up semi sweet bakers chocolate to be the melted layer, then sprinkled this mix of ground up items, as I had no toffee bits.
DH's red & green hard candies, pecans & slivered almonds. I left the very small round hard red & green decorative candies whole.

My husband bought a 10kg bag of whole wheat flour instead of white. We couldn't return it cause it was bought last month. So I used it in our regular recipe for cookies, and this past weekend in a cheddar cheese and ground beef buns - basically a simple dinner rolls recipe stuffed with beef and cheese.

The Graham Cracker toffee I made the other day....ahem, DON"T ever make this stuff if you are on a weight loss journey.
I HAD to just " taste "it and that was the end of me. Finally I begged DS to take the small container of the leftover bits
up to his room. This dish is for Christmas Day....for our guests! :hahaha: I've placed it far away from me in the cold room buried
under the canned goods...ha ha.

Hubs cranked out 4 different Xmas treats in about 2 hrs this morning. Once he got cracking he really motored as he knew I needed the kitchen in the afternoon. A nice treat to serve company after a turkey dinner tonight!
