Made 2 and a half dozen of whole wheat chocolate muffins.
I have no idea why these things happen BUT this time it was with AP flour. I've been on a simple carb restricted weight loss plan since Sept 7th......started WAY BACK in 2025....lol.
We all indulged at Christmas but if you sip enough wine none of the calories count lol.
Anyways, in November I went through the stuff in the cold room and realized I had way too many bags of AP flour. There had been an incredible sale at FB
( before I decided to go on a diet ) and I had bought 4 large bags. I did use some of the flour up here and there for the guys baked goods, but about 2 moths ago I decided to give 2 of these large bags to the Food Bank. I mean at the time i did not want it to expire since :hahaha: I would not be using it up on this diet.
Then yesterday I made up 3 balls of pizza dough and today I've baked up 18 MEGA sized cheese muffins. WHY NOW?? How am I am all of a sudden wanting to bake bread and other goodies? :shrug: I really had to resist baking up some crusty bread.
So my remaining AP flour stash will probably only last us till March now......:eek: maybe? ha ha
Some members in here shop the discounted things on Dec 26th to prepare for the next year.

Today I gave a trial run making 1/2 the loaf recipe and using just 2 Bosc Pears. After cooking the pears I placed
the 4 halves each into food coloured water. ( 2 red, 2 green )
I also used store bought whipped topping instead of fussing with that Toasted Sesame Crème Fraîche.
I sliced the pear halves into wedge like slices, placing them in alternate pattern over the sliced loaf cake and
whipped cream. My whiskey syrup turned out the consistency of corn syrup but with better flavour.
I will put this on the 2026 Christmas Dessert menu!

I've been itching to make something in my new " baby sized " 5 lb. stand mixer so I went with simple.
A Betty Crocker lemon cake mix, adding fresh lemon zest to the batter.
I wanted a thin drizzly sort of topping, so to a tub of Betty Crocker cream cheese icing I added lemon zest,
juice from a large lemon and 1 cup fine diced mango.
This morning I used up the leftover filling from when I stuffed the Manicotti shells on Monday.
It was a mixture of Feta, Mozzarella and Swiss cheeses, spinach, grated zucchini, mushroom,
onion, garlic and egg. I " built " a small roast pan of lasagna. Spread fresh sheets of the noodles
with meat sauce, spoonful's of filling, then topped shredded Mozzarella. Repeated 4 times.
This will be for any meal the guys want to have it at.
lol....seems I am fixated on building pans of lasagna! Early this morning I used a few leftover dry noodles I had wrapped up
in the cupboard along with 1 box of oven ready noodles, 1 bottle of passata, 2 jars of Classico spicy red pepper sauce, sliced
mushrooms, Feta, Nacho grated and Monterey Jack cheese.
The " meat sauce " was 2 cans of Stagg Southwest Chicken chili! Sadly, an issue was discovered after baking it for an entire
hour at 350.
The bottom layer of noodles seemed " tough ", while all the others were great. It was then I realized those leftover dry noodles
were NOT the oven ready kind. I covered it all tight with foil and tossed it back in at 250 for another 50 minutes and thank goodness
all layers are now soft and delicious. DS taste tested it before leaving for work....lol.
I just put a zucchini loaf in the oven.
This! Except I had no nectarines, used a lone wrinkled mango and 2 ripe kiwis
to go with the blueberries and sliced almonds.

I am about to turn 3 mangy looking bananas into banana bread.
^^^ the mangier the bananas, the better the banana bread! I baked 12 carrot/apple/pecan muffins
while DH was making a stir fry for our Saturday dinner.
