Made more chocolate cupcakes, some without eggs & milk, but used apple sauce & water for testing! My work crew loved them as did many friends! Looks like I have the chocolate recipe figured out...now on to carrot cake cupcakes! 13 days & counting until the big wedding day! (my friends, not mine!)
Just this week I baked a super delicious red velvet cake. My friends and cousins really like it and they're asking for more. I don't have a final training in baking but I learned it through trial and error and of course using some recipes I got from the internet.

So my dad brought me a ton of zuchinni from his garden, I made a couple of zuchinni breads but they are "heavy", still taste good though. I have a lot more to make and was wondering if anyone would share a good zuchinni bread/muffin receipe with me? Thanks in advance.
I have a great chocolate zuchinni muffin recipe will try and post one tomorrow as I am off to bed. If you don't want to use it all now you can grate it and freeze it.I do this all the time to use for it later for baking.I usually freeze 2 cup portions.
Thats a great idea thriftygranny - My MIL always has tons of zuccini - to the freezer it will go!
I made some whole wheat blueberry buttermilk muffins :P

I would love that receipe if you don't mind sharing! Thanks. I made 6 loaves this morning but was going to make some muffins to freeze as well. I am going to freeze the leftover zuchinni and make another bunch of loaves and muffins after Christmas.

Chocolate Zucchini Cake or Muffins
Have all ingredients at room temperature.
1/2 cup oil
1/4 cup butter
1 3/4 cups sugar
2 eggs
1tsp vanilla
1/2 cup buttermilk
2 1/2 cups flour
4-6 TBSP cocoa(depending how dark you like your muffins)
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 cloves
2 cups grated zucchini
1/2 cup mini chocolate chips
cream butter, oil, sugar, eggs vanilla and buttermilk. Sift dry ingredients and add to creamed mixture. Mix in zucchini and chocolate chips.
bake in a greased and floured bundt pan or a 9 X 13 pan at 325 for 45 minutes.
***for muffins I do Jumbo size and start checking for doneness at 20 minutes all depending on your oven and size of muffin you make. This freezes really well.ENJOY
