    Right now my lunch consists of cucumber tomato and light feta with vinegar plus an 'add on'! Today I added in a whole grain ham and light cream cheese wrap. I need something quick and easy. I prefer not to eat the packaged meals or processed foods.

    Would love to hear your suggestions!!!

    You could make a big batch of soup or chili on the weekend and divide it up for a few meals to reheat and eat later, or freeze for other days.

    Yes, I'm big on soup. I also take pita and hummus for a snack fairly regularly. Hard boiled eggs are generally available in my fridge, and I'm thinking of doing some 'McMuffin' style breakfast sandwiches for the freezer that I can grab and go with. I saw something on Pinterest about that, cooking a dozen eggs in the oven in a muffin tin!

    Brown rice + protein of choice with sauce
    with a green salad!

    The rice can me made in advance and portioned out, even frozen. Then just add the protein you cooked from dinner to it and BAM! lunch is ready for tomorrow.

    Quinoa salads or soups or just served in place of rice/carbs is super healthy too!
    Chicken salad wrap with loads of veg like tomatoes, lettuce, cucumbers

    soups good if you have a way to reheat or use it in a thermos flask.

    I read a good idea....six eggs, peppers, mushrooms (omelet recipe of choice...and bacon or ham)..spray muffin tins and fill with 1/4 of cup of mixture...bake 350 for 20 min....presto...for the week....
