The boys school is having a bake sale to raise money for the Grade 8 Grad trip this year to help lower the costs, so I have baked up a bundt cake that is dairy, egg & nut free - tastes very yummy!
Dairy, Egg, and Nut Free Spiced Apple Bundt Cake
1¼ cup granulated sugar
¾ cup vegetable oil
¾ cup unsweetened applesauce
1 teaspoon vanilla extract
3 cups unbleached all purpose flour
1 tablespoon baking soda
1 tablespoon ground cinnamon
1 teaspoon salt
½ teaspoon ground nutmeg
3 cups peeled, grated apples (about 4 - I found mixing 2 granny smith and 2 mcIntosh gave a nice flavour - but these can be your preference)
Juice and zest of ½ lemon
- Preheat oven to 350°F and spray bundt pan with dairy free baking spray
- Add sugar, oil, applesauce, and vanilla together in a bowl, mix until combined
- In a separate bowl, combine flour, baking soda, cinnamon, salt, and nutmeg with a wire whisk - add this to the sugar mixture and mix thoroughly
- In a separate bowl, combine the peeled grated apples with lemon zest and juice - fold this into the sugar/flour mixture
- Pour batter into prepared bundt pan and bake for 1 hour or until top is golden brown and toothpick comes out clean
- Cool slightly, then loosen cake from pan and turn onto a serving platter.
- Sprinkle with confectioners sugar

great job KrazE,it looks really good and sounds very healthy, i wish to see how it looks from the inside.

That would have to wait until I actually make another one - since this one was for the school, it needed to be whole.

I work with a Jewish woman who keeps kosher. She makes her family deserts neutral so they can eat them no matter what else they have for that meal.
