    Yup, I use chia seeds too - you can make a sort of gel with them if you soak them. I add them (and hemp hearts, for protein) to smoothies, and just about anything I bake with.

    In other news, gluten-free bread SUCKS. I have gone against my now deeply ingrained difficulty in spending "too much" money on food - especially bread, which I find insanely overpriced, even for the regular stuff - and bought GF bread for $6+ for little teeny tiny half loaves, and I am here to tell you: don't bother. They're awful. So is rice-based pasta; it's just gluey, even if you're careful not to overcook it. Blech.

    Quinoa is where it's at when it comes to carb replacement. Loads of protein and very versatile!

    So just cut bread out of your diet.

    Quinoa...Ah...for some reason it gives me goose bumps when I look at it.
    You should have seen me eating them...those goose bumps...ah...
