Roasted Green Beans!

I tried a new recipe tonight for fresh green beans and sliced mushrooms roasted with garlic, olive oil and balsamic vinegar. I don't even like green beans much, but these were so good! Takes about 20-25 minutes in the oven. Sprinkle with Parmesan before serving.

Main downside, you spread them out on a cookie sheet to bake, and if you want to say, bake your chicken, there's no room in the oven! So I baked the green beans first, and by the time the chicken was cooked, we'd nibbled many of them away.

DS liked the raw green beans, but while these were baking he walked into the kitchen and said, "Something smells REALLY bad in here!" We made him try one, he was not impressed. With that in mind, I think next time I will add onions and more mushrooms. He thinks that if those are involved, I'm trying to poison him!

green beans are one of my many ( veggie ) fav's, I just love them simply steamed, but still firm. I would probably love the taste of the other ingredients, but that cooking time would make me cringe as I would be thinking they are overcooking. Your Ds's comment made me chuckle.

I don't like green beans much, but my girl friend love it and is used often in Chinese cooking. Maybe we give this a try tonight. Thanks!

i just love roasted green beans!! (although i only toss them in olive oil, salt and pepper) mmmm!!!!

I've never tried Roast Green Beans before but i just bought some yesterday so maybe i'll give it a try!
Having said that, i'd never tried roast Cauliflower until i read about it on SC . Now i just love it - so much better than
boiled cauli as a veg.

SC is the greatest...i learn new things all the time!!!
