Thread: left over tacos =

what I have done with left over taco meat is boil my fav pasta, heat up the left over meat with the toaco sauce in it and then drain the pasta and put everything together! it is really good and it is a quick pasta dish!

From last week, I took leftover cooked fish (we bought the monster size tray of lake trout at costco and had 2 generous meals + 1 entire filet leftover) and made it into fish tacos (well, quesadillas really) with a bit of lime-cilantro salsa, a touch of miracle whip and some monterey jack cheese. I toasted them in a pan to give a bit of crunch as all of the rest of the ingredients gave softer textures. There were no leftovers, so I think it'll be a recurring recipe for leftover fish!

Leftover taco ground beef- Tater tot taco salad- make some tater tots, top with heated beef mixture, chopped lettuce, shredded cheese, tomatoes if you like, chopped green onions if you like, and sour cream. This works great if you just need something for lunch for 1 or 2 people the next day.
