They are expecting crowds 3-5x the amount of new years for that tight rope walker....and hotel prices to triple. avoid June 15th like the plague.

You can hike in the niagara gorge with a picnic lunch and set up on the giant rocks near the water and watch the jet boats zoom by. I do this frequently and I live here!
Napoli Pizzaria and Grill is a great place to go. Not so touristy.
Rent bikes and ride from Niagara to Niagara on the lake. Its a good ride but its fun! Be careful going down the escarpment at top speed.
See the friday/ sunday night fireworks over dessert at a falls view dining room ( Hilton is my fav. I think its called water mark?)
Shop in Buffalo at the Walden Galleria. There are outlets in Niagara Falls NY too.
Thats all Ive got for ya right now.

I would also recommend hiking in the Niagara Gorge. Free
Shopping in Niagara-on-the-Lake and the Military Outlets in NY. Depends on your ability to turn down a deal.
If you don't mind spending money...the Whirlpool Jet Boat in Niagara-on-the-Lake to the falls is awesome and adventurous...but costs $50 a person. Expensive but worth every penny."There are more important things--friendship and bravery...."

I agree with kw01ai the Whirlpool Jet Boat ride was much better than I expected. Bring a change of clothes and do the open boat ride-- much more fun. It is pricey but sometimes comes up on Wagjag or Groupon, ect. With no kids going to the casino can be fun. The buffets are okay, the shops in the mall part are fun to check out and the views are great if you walk along the back of the Fallsview Casino. I wouldn't stay at their hotel as the amenities are few in the rooms (ie-no fridge in room) as they want you to spend time gambling. Oh Canada Eh is a good show with a dinner, but the kids would like that too. Walking around Niagara on the Lake is interesting- lots of small boutique and art stores. A wine tour is fun- if you drink wine. You can drive I have been to pretty much everything around here as I live in the area. In the summer it is hard to find bargains even if you live here.

Without knowing what interests the two of you, I suggest you go for a themed 1812 outing or dinner on your outing. Doors Open Niagara is also taking place in mid-June, so if you like looking at buildings and learning about their stories, you'll have a roadtrip and then a meal outing.
The link above mentions a progressive lunch at a winery, along with some festival events.

Ok--here is my list, lol. i live near the falls so have done some stuff. Here
-The jet boat tour is pretty good.
-Went on maid of the mist for first time this year it was pretty good to.
-Butterfly conservatory is neat.
-Don't support marineland and go there...just google marineland cruelty and you will see...but you aren't bringing the kids so i guess you wouldn't anyways i assume! lol.
-Always wanted to go on the cave thing where it takes you behind the falls or something but i am way too clastrophobic for that!If you aren't-look into it!
-Bird kingdom was alright.
Just don't go to those waste your money things like 'wax museum' or 'haunted houses' ... waste of money if you ask me. Unless of course you are into that stuff i guess!
