Hi there,
My parents have canned chickens and other meats over the years and I was wondering if anyone else does this.
My parents have left their pressure canner here with me and I've made a black bean & corn salsa which is fabulous, however, I'm wondering if anyone on here cans meat (wild game, chicken, turkey, beef, etc).
I'm personally thinking of canning chicken raw packed for later use, the dinning possibilities are endless and I could probably empty 1/3 of my freezer (saving on hydro in the long run).

Sorry, I don't - but just wanted to say my friend's mom used to do this, and wow, is it every yummy!
I do know there are two methods - and you have to be really, really careful!

never tried it but the bernardin book (at Home hardware/ walmart) has a good section on pressure canning meat... check out thier website maybe

Ok if you want to know a list of meat items I have canned in a pressure canner here is the list so far,
Spagetti sauce
chicken
pork
turkey
turkey soup
beef fajitas
beef peices
hamburger (dry packed pre cooked)
green chili with turkey meat and beans in it
weiners << yup I really did it and it works!
sighs... that is all of the meat stuff I can think of at the moment... chili will be added in at some point.
If your asking why I would can all of this... I like prepped food that I know I am not allergic to with the longest shelf life possible. Freezing these items keeps them good for up to 9 months max... canning them means they are good with no frost issues for 2 years unrefrigerated. Not only that I only can Items when I get them at the best possible price. Now when I am sick and in pain I don't eat out and the food is something that is cost effective and it won't give me a allergic reaction.

Hi there. I'm new to the site and was looking around when I seen your thread. I have never used a pressure canner, just the good old fashioned one. Being honest I don't even know what a pressure canner is or what it looks like. I use an old blue canner with a rack to lift the jars out with. (LOL, how can you tell I'm from the 'old school")? You can- can anything though. The only meat I have ever canned is raw packed. The thing is to make sure it is cooked completely. I would suggest that you contact the company that made the canner you have and ask them to send you out one of their booklets on temperatures for meats, fruits and veggies, etc. They know what their canner is capable of as far as temperatures and time.
Canning holds a lot of enjoyment and satisfaction. Have fun with it.

I am interested in how you can food using the "old school method".
I have one of those old blue pots with the rack but have never used it for canning. Can you tell me how it is done or where I might be able to get information on how to can using that method?

Hi
I have been looking for a pressure canner, any ideas where i would find one in canada.
I was planning to pick one up in the states next time i go. I would rather buy one here.
