I just put a batch of my Mom's "Commandos" into the oven; most of our gang probably won't take more than one since we prefer meat and cheese platters to sweets, but it's traditional, so there we have it! :)
Hope everyone is enjoying a restful or productive day today...

Lynn, that's a unique way to get rid of "Commandos"- just shove them in the oven! Are you related to the wicked old lady in Hansel and Gretel? Lol! Ok, recipe is needed!
Stella's Commandos
Make meringue from: 1 egg white, 4T icing sugar, almond extract. Set aside.
Cookie:
Beat 1/2C shortening (not butter, no subs!), 1/4c brown sugar, 1 egg yolk, 1c flour, 1 tsp BP, 1/3 tsp salt.
Form into small balls and place on cookie sheet. Using the end of a wooden spoon indent the centres as much as possible without crumbling the cookie.
Bake @ 325 for 10 minutes. Remove from oven, re-indent the centres, place some jam in the indentation (I love seedless raspberry jam for this), add a dollop of the meringue to cover the jam, place back into oven and bake for another 10-12 minutes or until the meringue is set and the cookies are a nice tan colour.
Refrain from nibbing until Christmas. If you can.
Thanks @avoncalling u for asking for the recipe. I had no idea what a 'Commando' was.
And, thanks @lynn 40 for the recipe. I may just have to try those.
You're welcome, Hicks...Avon...they sound so simple to make, but using that seedless raspberry jam (FB) and the meringue...honestly, our DD isn't a "sweets" eater, but she loves these...something about them is just too darn good! :)
This recipe only makes about 2 doz, fyi...The sometime tricky part is making the little indentations before putting them into the oven the first time; I usually hold the ball in my hand and gently poke it with the wooden spoon end. Not too deeply, you can make it deeper after the first 10 minutes are up.
They're addictive! It's my Mom's recipe, so it's traditional they're on the cookie tray at Christmas..:)
Enjoy!
When I read commando - I only thought of not wearing underwear....
Good kitty news - we weighed Taffy cat last night and she's gained just over a pound, so that's wonderfuL! I knew there was a difference, she's still skinny, but didn't seem as frail - you don't feel her whole spine when you pick her up.
She and Vader are all snuggly-wuggly at my feet right now, under the computer desk.
For the past few evenings, Vader has wanted to play with her - the same way they used to - but Taffy will have none of it. Maybe she'll come around.
added - my husband also finally gained some weight, two pounds - which is a very GOOD thing. I just don't know if he'll ever get back up to the weight he used to be.
So tired tonight. Feeling good though - I have a CT scan on Tuesday.... Not looking forward to that in the least. Take care all. xx
Ugh. I hear ya...I just had a cardiac cat scan with an iodine-based injection and that was downright scary; the thing moved around then down to within inches of my chest..no fun, that's for sure.
Good luck on your test on Tuesday, Hon.
Nat, so nice to hear that Taffy's gaining weight and getting healthier; strange that she's not feeling playful right now, but she's been through so much over the past several weeks, so maybe it's understandable. Good on your hubby, too!! :)
We visited 'the kids' today...our DD was naturally working from home, although she baked sugar cookies for 'the boys' and they were decorating the trees, snowmen and snowflakes. It's so cute how their new doggie, Lexie strolls onto the sofa and puts her head on my lap and looks up for a scruffle which, of course, I'm more than happy to provide. She loves her tummy-rubs and is so affectionate. She's great with the little black kitten, DJ, and understands that for now, at least, the little one rules the roost. She just lays on the floor watching the thing play...so patient and thankfully keeping her huge paws off her, lol....
Well, off to watch another of my pvr'd Christmas movies. Nat, I still haven't run out of movies and with only 12 sleeps left, I may run out of time before I run out of movies!! :)
Walks?! Where you hiding, Girl??!! :behindsofa:
Have a lovely evening, everyone!!
I think she's on a mincemeat hangover.
Nat, that's good to hear.
Loocie, good luck with your Cat Scan on Tues.
Lynn, I have an old family recipe too, handed down from my Grandmother. The family always looks forward to my Social Tea Danties. This'll be the 1st year I haven't made them in over 45 years. When we have our 'Christmas in July' lol I'm going to add yours as well.
Walker has probably crashed after all her baking.
aw you guys have the best lines to make me feel missed! I was out ( finally! ) watching some theatre flicks. With that crazy shift the guys were on no one could ever synchronize a time to see a film together. I was starting to experience withdrawal! ( I LOVE going to movies )
So thanks to coupon girl who sent me a couple of B1G1 pin codes, AND used 2 of my own M & M pin codes and 2,000 Scene points three of us ( DH, DS and I ) were able to go see 2 flicks ( back to back! ) Six totally free admissions!! We watched Krampus and The Hunger Games Mockingjay part 2.
I am likely going to head up to bed very soon though, you are right hicks I am beat! PLUS I have not been able to use my left hand today
( muscle strain from making and rolling so much dough and cookies yesterday ) Oh well, that will heal soon.
