Hi Cheekysaver, lemon cheese, never heard of that before, sounds interesting, what is it exactly?
I like canning almost anything, jams, chutney, pickles, relish, salmon, vegetables.
Found some frozen cherries at Superstore last week, so am going to make some cherry jam next. washed and sorted more jars last week, but have been busy working outside in the yard so not doing too much canning.
Happy Canning Everyone!
LOL well Lemon cheese was what it was called back in the day. It is a canned lemon curd. It is sweet and not bitter and has a strong lemon flavor. It has butter and egg in it and a shelf life of about 3 months... that is even going by the book. Here is the recipe http://nchfp.uga.edu/how/can_02/lemon_curd.html
Anyone have a tried and true spicy green bean canning recipe?
Hi Cheekysaver, have a recipe for lemon curd, not as many eggs very simple, but recipe suggests that you fill jar and freeze this product, have never made this sounds yummy.
Harbie, no don't have a recipe for spicy green beans, good luck recipe hunting.
Harbie I have not canned spicy beans. Are they pickled?
Kitty77 The curd is nice and full of flavor. It is perfect for on toast or for layers between a cake. The lemon flavor is too strong for something like a lemon meringue pie.... but a layer between cakes and ohhhhh my! If you have someone who doesn't really like super sweet icing you can use whipped cream for the topping on the cake with this stuff in the middle. It will hit the spot... oh geesh i have to go eat something... that made my mouth water! LOL
If you store them in a cool dark place the shelf life is the longest. My parents have a cold basement and their stuff lasts and lasts. I do not and there is a difference in the shelf life.
Dilly beans are one of my favourite pickles. This recipe is delicious: to make them spicy, I would just leave out the dill seed from the recipe and double the chili flakes. Altering the quantities of dried spices in canning recipes is perfectly safe.
If you'd like to prolong the shelf life, I'd suggest adding Pickle Crisp to the brine. I used it when I canned dill pickles a year ago and they're still crunchy.
I did another batch of jam :). This time it is raspberry and the other is an apple & currant jelly. It is to die for <3
I am doing another batch of the apple & currant tonight and will try a blueberry tomorrow (by myself without MIL)
Harbie, the jams look so beautiful all dressed up in their jars!!!!
Good luck with the blueberry jam!
Have to pick rhubarb again, might just can it in small jars for DH lunches.
Happy canning Everyone!
I need more of the small jars too :)
Ok Lowes does not have canning jars listed... or mason jars, home canning or bernardin... but they normally carry them and price match. If you price match walmart's price and their price is higher they will beat the price by 10% of the lower price. Here is walmart's price on canning jars. http://www.walmart.ca/search/canningGood luck!!!
harbie that's so beautiful! thanks for the inspiration, i'll have to get into it. gonna look up some pick own fruit farms to see whats in season, then get my jars out.
Wow, lovely job on the jam Harbie. :) Looks fantastic.
I usually make green papaya, green mango and carrot pickles.
Lovely labels, Harbie! :)
Hi Ladies,
Bought 2 more big bags of cucumbers at the Co-Op, they are grown in one of the local green houses and if the cukes are not perfect too big, small, mis-shaped, they are weighed at 5 pounds and bagged go for $4.99, they are the long English cucumbers, great for making relish and bread and butter pickles, not so great for dill pickles, can buy them like this all year long, so made 4 more batches of sweet relish. hopefully this will last until fall. Also made a batch of freezer raspberry and blackberry jam.
The Co-Op also had bags of too ripe bananas, so bought 2 of those and made 4 batches of oatmeal banana muffins today.
Happy Canning Everyone!
Harbie your fancy labels got me talking to my mom... she has a fancy cutter for making cards and scrapbooking... now we are going to do personalized labels too!
I could not find rhubarb to save my life in stores. Mom's plant is not producing enough to get what we needed to make grandma's rhubarb relish so I put out word i was looking to trade for some including a ad on kijiji. I offered up some aveeno body washes that i am allergic to in trade and someone offered up the rhubarb they could not use for free. I still gave her the aveeno (I don't intentionally over stock on free items to trade off, but I can't guess what I will be allergic to!) We wound up with a laundry basket full of rhubarb!!! Wholey rhubarb batman!!! :) If you are having trouble finding some kijiji might be a place to go.
I am all set to make cherry pie filling tomorrow. Got a large bucket of frozen pitted cherries, sugar and clear gel. I even bought the Blue Book guide to preserving.
Now the problem. I cannot find a recipe using clear gel to can cherry pie filling. Does anyone here have one? Thanks so much.
Here is a recipe for the cherry pie filling from a usa government website. http://nchfp.uga.edu/how/can_02/can_...lling.htmlHere is a vid of a lady using the recipe. https://www.youtube.com/watch?v=e-dITzmD0dQ
Thanks cheekysaver for the recipe. It worked perfectly. Your link was a bit wrong, so here is the correct link:

Watching the video was brillant, as I had never used clear gel before and in the video she shows how to use it very well. Today I made 8 pints of cherry pie filling and it all worked perfectly.
I am glad it worked for you. We have been canning. When I say we that means Mom and I are canning the same thing so we do it together. We did rhubarb relish and got 14 half pints (that we split up) We did strawberry rhubarb pie filling 14 pints. Tomorrow we are finishing off the rhubarb and making 2 batches of jam... you guessed it. rhubarb ... and a batch of strawberry. LOL I am sitting down and doing all the prep work with mom and we take turns stirring the pot and jarring things up. We work really well together.
Here is what we have been up to. From left to right there is strawberry blueberry jam, rhubarb jam, rhubarb relish, strawberry rhubarb pie filling, strawberry jam and stewed rhubarb. Now I can only say... imma tired!!!
^ Wow, that's a lot of work! Great job.....I am just getting into canning. Not quite what you have pictured above, maybe 1/6 of that, lol :)
LOL well Mom and I do not can together often. When we do, we do big batches. Only half of this will be mine. For around $30 in food stuffs including produce sugars and pectin and vinegar we produced about 70 jars. Now we know everything that went into it... that it was done correctly and at the best prices when you have to buy your stuff. I have been buying things for canning on sale for months like vinegar and sugars to get ready for the season. When I started out It was one batch at a time too. I love it and find canning to be addictive. :)
