Wow cheekysaver, you and your mom sure have been busy. Looks great and I am sure it will taste wonderful this winter. Question: What is rhubarb relish and how do you eat it? On a burger?
We planted a garden this year and over estimated things. We will have hundreds of onions, any suggestions for the onions would be welcomed.
LOL rhubarb relish throws off most people. It is considered a meat relish and it has rhubarb, onions, cloves, cinnamon, sugar and vinegar. We eat it on eggs. It is my Grandma's recipe.
Cheekysaver, your rhubarb relish sounds the same as the chutney I made, we use it as a marinade for chicken and pork chops, just pour on your meat, then and bake in the oven. Will make about 25 pint jars of that this year, rhubarb is ready to pick again.
Ladydarcie, you can do so many things with all those onions, can, freeze, relish, dehydrate.
One year had so many onions and no time, so just peeled the onions, cut in halves and froze them, ready for soup,stew, pot roasts, etc., chop fine and freeze for use on hamburgers and hot dogs, just thaw them. Have fun with your onions!!
I made clover jelly for the first time a few weeks ago. I had decided that dandelion jelly was on the agenda for the day only to discover that I'd missed peak dandelion season by just a few days I'm sure. Couldn't even find a hand full of them. But there were a ton of clovers everywhere so I searched out a recipe and sure enough found a very simple one so we gave it a try. After what seemed like an eternity of picking clovers (mostly because I had my 4 year old and 1 year old in tow and the 1 year old dumped over the full bowl of clovers into a mud puddle half way into picking) we had enough. I only made a small batch to try and froze the rest of the juice to experiment with later.
yum everything looks so delicious..you will be well stocked for winter and so nice to have items that you made and know what is in them...no hidden nasties. i always enjoy seeing what new things you have made. thanks for sharingQuote:

Made cranberry sauce, spicy Asian dipping sauce, pancake syrup this weekend, have some mustard seeds soaking to make English mustard. Trying to make a lot of condiments for use through out the year.

Kitty77, now you've got me thinking on a whole other canning level! Mustards, cranberry sauces, syrups....... Oh I'm so giddy :shock:
Canadascouponeer, I think you might have some luck finding them at either garage sales or thrift stores (I suggest getting new seals though) but I also heard that at the end of the "canning season" places like Canadian Tire and such have them on sale and that's when I plan to really stock up so I'm set for next summer for sure :)
Do you have a recipe for the spicy pickled beans they look awesome and I think I might like to try it. Is it water canned? ThanksQuote:

I am sorry I have not been on much. Summer is just nutbars for us... we are either camping or recovering, canning or recovering, or shopping and recovering. Yup that looks about right.
Let me find it and I'll post it. I personally like them more spicy than they actually are so when I open a jar I add Chili flakes and let them marinade and get spicier :DQuote:

I found a even better deal on the pickling cukes. .39lb pic below... feel free to take it and use it to pm. (that is how i do my pms... i save them in a file by expiry dates in the description with the pic all in the file. It works well for me.
Yesterday I spent the day with my MIL and we jammed......actually we jellied ;)

Was at RCSS today and bought the complete book of small batch preserving it was 40 % off so about $11 I thought it was by ball but now that I look at it I realize that it is not. There was also o bigger one by bernardin but the recipes looked really big and I just want to make smaller batches of a few things. Hope this book is okay. One author is a dietician and professional home economist and the other has a masters in food science, is also a certified culinary professional and consultant to government and industry so hopefully the recipes are safe! I am always afraid that I am going to poison someone.

Scouponer it is always good to have a canning book or 2 on hand. Ball and Bernardin are the same company. Remember you can always pick and choose the recipes you want to find online and create your own book of the recipes you love. Spending money sometimes help and the ball complete book of home preserving is somewhat of a canning bible. There is also a Amish canning book available on kindle. They deal with everything from game meat and more in it. In my opinion if you are new the Ball complete book has the most info you will need to start out. Just:) try and find one at a great price. After a few years of canning I finally started to get some books for my own reference.
Ok who is up for a canning challenge? Let me know if this interests you. I would love to do a challenge where I post a few of the good deals on cannable items. This way we have a chance to get some great prices and a wonderful stockpile of home canned goods. Let me know. I would be willing to post youtube vids I find to serve as a general guideline. The recipes you choose to use of course would be totally up to you. (I will still go camping once or twice this year too)

Bread and butter pickles (this uses long english cucumbers and they are on sale 3 for $1)

When canning sauerkraut it is a process. It needs to lacto ferment for 2-4 weeks before canning. USE A FOOD PROCESSOR!!! Work smarter not harder! :)

All of the above methods are water bath canning that anybody can do. If you are new to canning or if you do not have a pressure canner all of the above work for you.<br><br>If you don't have a cherry pitter some people use a chopstick or even a paper clip to get the pits out. It will take time but it is something that can be done.<br><br>When it comes to the sauerkraut it is expensive in stores. Home canning is the best way to fly. If you don't have a food processor you can use a knife and cut it very fine. Specialized equipment is not required. :)<br><br>This is a vid showing you how to use jar rings to make a water bath canner. If you have a round wire cake rack it works too, just put it in the pot upside down. Here is a good deal. 4L heinz vinegar for 1.99 at fortinos until the 14th. The best deal I have found was .99 cents at the beginning of the year... but you don't see that price often. (yes I stocked up!)
