Chantel, start off canning with freezer jams, very easy to make. Made blueberry and strawberry freezer jam this year, just so good.
Gather some jars and some Certo & sugar and practice cleaning the jars and setting things up. Liquid pectin is even easier than the powdered kind. Follow the recipes exactly.
Dill pickles are a good starter, just follow the directions of the recipe exactly, just have to let them sit for a few weeks before they are ready. But most of all make sure everything is sterile and that the lids snap as the jars cool so that you know that they are sealed, store in a cool place.
I save Kraft mayo plastic lids and use them for the freezer jam jars or you can use the old fashioned mason jars, no worry to make sure that they are sealing for freezer jam.

Ok I did some youtube research for you to make this easier. There is one step he doesn't do as well as it should be and that is putting the canning jars in the dishwasher to sterilize them. I use the over on 250 F for 20 mins to sterilize the jars and i put the lids in a small pot of boiling water and I turn the heat down to low until they are ready to go on the lid. For some reason I thought Canning would be interesting to try this yr.( i had never canned before). talked to my sister and she sent me some old family recipes that we think hadn't been made in years. I become addicted to it. Every weekend I would go to the local farmer's market and buy fresh veggies..
I did the following 3 types of Salsa, 3 types of pickles raw carrot relish,jalapeno and banana peppers pickled beets, spaghetti sauce.
I admit I did "kill" some cucumbers when making some pickles. Spoke to some mennonite farmers and told them of one the problems I was having. (pickles turned white). They said they problem was the water. Was told not to use tap water, but spend the money and buy filtered water. It made the diffference
If anyone is looking for a neat recipe to try.. Try Beet Jam. Not one person I sampled it too, could tell it was beets.. They were sure was lying and it was some kinda berry
Anyone ever try making Kimchi? The fermented Korean stuff? Want to try it but not sure how well it would turn out? I guess you need to leave it on the counter for quite a while while it does it's thing...
My mother in law made some for my husband and I believe it sat on the counter for a couple of days then into the fridge...very tasty!!! A ton of easy recipes on the Internet....come into London and check out United Market..the new Asian store....they have the "spice" needed for the kimchi....good luck!

all I've canned this year is blueberry jam, but I'll make strawberry jam soon for Christmas gifts, and I really want to make applesauce soon.
I love to make jams, missed out this year, but did make 84 jars of dill pickles with some co-workers (it was my first time)
Do any of you use a pressure canner? I wanted to make large batches of soups and chilli and can them rather than freeze them. Anybody do this? Would love pointers if you have any!
I also made my own frozen veggies - broccoli and green beans

Oh my gravy my daughter opened up a jar of my spicy mixed bread and butter pickles... and in 24 hours almost ate the whole jar (500ml).... ummm I am guessing those are a hit concidering she doesn't like things too spicy and she hates sweet pickles LOL
Yay! You will love a pressure canner... it opens up a whole new world to storing your food and having it ready to go. Does anyone have a a recipe for a marinara sauce or pizza sauce? I have made salsa, tomato sauce, spaghetti sauce etc but have yet to find a RELIABLE recipe for marinara sauce or pizza sauce, I have found a couple but didn't trust them, having canned for a bit you can tell when a recipe just reads not right. I have a water canner and a pressure canner so either method works
P.S. you guys have really inspired me to think outside of the box with some of my canning next year :)
I can chili con carne each year and really like it, so convient to just open a jar. I do it in a pressure canner because it has meat in it, let me know if you would like the recipe. I have also down some stews etc. Planning on doing soups this year.
After reading these posts... I now have to read up on pressure canning.. and maybe add one to my Christmas list as well!

I have the Presto 23 quart pressure canner and I love it, it is a bigger one but I do a lot of canning in large jars so I find it is great for sauces, chili's and stews.
That being said some people advise against using a pressure cooker that large on certain flat top stoves. I have a flat top and have never had an issue with it but a lot of people don't recommend it. There is a page out there that lists different stove brands and the size of canner that they recommend. I will see if I can find a link and post if I do.
Just my opinion I am sure that there are lots others out there :)
