this was after my large NF shopping excursion this morning. A Brioche toasted bagel spread with liverwurst with herbs and 2 rounds of toasted malt bread with corned beef and mustard. Coffee.
Was in a bit of a rush this morning. Had to be at physio at 7am and then hit the grocery stores before they filled up so it was a coffee kinda morning.

Mixed together 1 egg with 1/2 c egg white, dried parsley, and black pepper. Sauteed fine diced green onion, mushroom and red pepper, ( 3/4 c total ) tossed that into the egg mixture and nuked for 1.5 minutes.
Substantial sized omelet.
3/4 c. plain Greek yogurt with stevia powder and diced strawberries.
Mandarin decaf herbal tea.
^^ ditto of yesterday's breakfast....it was every bit as satisfying.
I seem to enjoy eating the same thing for breakfast atm. It's working for me so Ill do it till it no longer works.

Man! Talk about another wake up call.
So I don't normally count calories. I'm trying to just eat fresh foods now.
Imagine my shock when I made a free account at MyFitnessPal, input all my data and took the time to list every breakfast, lunch and dinner I've eaten since last Wednesday.
Turns out every day I was consuming just under 700 calories a day, so I need to bump this up. I need at least 1200 a day so reworking is in order.
I feel like I'm back in school.
Good for you for tracking Walkonby. When I tracked a while back on SparkPeople (also free) I was shocked to find out I was really low on my protein intake. A doctor asked me if I was vegetarian years ago because my B12 was low. All good now with DH being at retired...he likes his meat.. I used to just eat salads or stirfries with coucous.

I was extra hungry for breakfast, but then again it was nearly 10:00 a.m. so that made sense.
2 hard boiled eggs, nicely peppered, 1 mini cauliflower pizza, 1/2 of a cauliflower Chicken Pot pie, 3 tblsp plain Greek yogurt with 1 oz. diced mango and diced strawberries. A Tassmo combo , Long Espresso and Cafe Crema with 2 tblsp 10% cream

First coffee since January 10th. I’m trying to limit the coffee since it intensifies my anxiety but I needed a bit of a pick me up so I’ll only drink half of this cup. Then choke down some oatmeal before I hope on the bike. I reeeeeeeally don’t enjoy oatmeal but I know it’s good for me so hopefully my gag reflex won’t kick in! :yikes:

Today the 3 of us got our booster for covid! Upon return from Rexall I had to finally eat, so this was my " brunch".
The last 3 ciao toast slices that I turned into fake pizzas, veggie sticks and hummus, tomato pieces, and Lactose and fat free Greek yogurt with diced orange and banana and Splenda mixed in.

The technical data was pleasing to me....496 calories, 29 gr. carbs, 20 gr fat, 17 gr protein, 9 gr. sugar and 650 mg sodium.
Leaves me plenty of wiggle room for a dinner when the Leafs start at 7;30 p .m.
I am in love now with a low carb ( high fibre ) product called Joseph's Lavash Bread .

Nothing like " bread", more like a wrap...but so versatile for the things I want to fill them with.
For breakfast today I used 1 and a 1/4 of a sheet, cut into 5 rectangular pieces.
The first 2 pieces had hummus spread over, then topped with julienne strips of baby cucumber and thin slices of sk/bnl sauteed chx breast.
One of the other pieces I filled with diced lettuce and egg salad, the other lettuce and chx salad.
A seaming hot Tassimo with half and half and 1/2 cup Lactose free zero fat Greek yogurt with diced mango in it.
