I just made a pot of homemade cream of vegetable soup-yummy on a cold, snowy day.
Leftovers from dinner. Beans and rice. and an apple with almond butter.
Today is Vegan chili my guy made last week. The last of it.
One of six of the small courses served on Christmas Day was declared the standout winner, ( my personal fave was the Waldorf salad but....) as I was browsing in FB on boxing day , didn't I happen upon the same pkgs. of thin slices of pork loin that I had used to fill and roll up.....at 40% off too.
I snatched up all 4 pkgs. ( came to $11.00 ), then bought 3 more bundles of asparagus ( $8.64 ), I still had spinach and cheese at home to round out the filling.
Made up 32 more little rolls before anyone had made their way out of bed ! The kids went crazy when they saw more of them...
eldest DS took a batch of them home later that night.
As far as costs go these were around .75 a piece to make! So for that reason alone they will make a triumphant return next year.

lunch was late breakfast/early lunch (i guess you can call it brunch). Had some home fries, 1 scrambled egg, 3 strips of bacon, mixed fruit and toast with homemade caramel.
Picked up an almost " free to me " fresh turkey breast at Metro. After the redeem of 95 AM, get 25 AM back...the $10.50 breast cost me just .50 OOP. Placed it in the Air Fryer as soon as I got home, and as I put all the other groceries away and brewed a coffee it cooked away in the Fryer.
The skin soon began to get crispy and golden brown, so I flipped it over. Before long the inside was cooked through, moist and juicy, so I just HAD to have some of that for my lunch.

Fahitas. (leftovers from dinner last night) What a cheap dinner and lunch and still leftovers in the fridge. And so yummy. I don't understand why anyone would eat garbage (Mcdonalds etc for lunch)
Lunch was: You open the fridge and see whats there and pick what you want to eat!

these 2 entrees are actually dinner items that I got cooking up after shopping this morning.
Since I've had no breakfast yet, I'll be enjoying BOTH a portion of freshly made lasagna and also 2 slices of med. rare roast beef!
The family can decide when they'll be having theirs....All on different schedules here.
for lunch, it will be turkey soup from the turkey carcasse. Boiled a piece of that on low and then removed the meat still left. Added some chopped onion, chopped celery and some chopped carrot and also a small clove of garlic. Added some peppercorns and salt to taste. Will also be boiling some soup noodles.
