DH was really craving Eggs Benny yesterday. I thought what the hey, I bet we can make them.
We watched a Jamie Oliver and Gordon Ramsey video before and they turned out. I used a thermos like Jamie for the Hollandaise sauce. I would add less butter next time but I was lucky, the sauce didnt break.
I forgot to take a pic of hubbies plate all covered with Hollandaise but here are some pics. I poached his for 3 mins for soft and mine for 5 mins for firm.

NO FAIR!! I absolutely LOVE Eggs Benedict. I'm the only one here that does and I found a Hollondaise sauce recipe " for one " that satisfies my craving. I usually put tomato slices on the bread/toast, then thin slices of smoked salmon, then eggs and sauce. Your chunks of cooked fried potatoes look so appetizing. Great job.

Tuna patties on an asian salad. It was incredibly good. I tweaked the recipe a bit with ingredients I had. I think one pattie each would be enough but DH insists 2 are necessary lol. https://hellochef.me/recipes/tuna-pa...d-peanuts-2809 I added 2 large tbsp of mayo to the patties. I was missing snow peas and used iceberg in lieu of little gem romaine. for the dressing, I used lemon juice, 2 tsps of siracha, 3 tsp of sesame oil and 4 tsp of soya sauce, the key is to mix the salad with the dressing along with the salted peanuts. It was super tasty.

half assed lunch ( late ). This Intermittent fasting I've gone on is kind of the reason. 1/2 pear cut into sliced with smears of Adams dark roast PB on them, Ryvita snack bread with plain Greek yogurt and sliced bananas and pineapple, few slices Swiss cheese of the big block. Coffee.
Day 4- Shrimp/rice/green beans
a can of Campbell's tomato soup with toasted kaiser bun. ( soups were on sale for .50 a can at some point and their tomato is my weakness )
Made a fairly large batch of this.
Serves: 6-8 Stanley Tucci's Pastina Classica
Ingredients:
4 tblsp butter, 1 pound dry pasta S.Pellegrino Stelline Pasta
1 cup + 6 tablespoons finely grated Parmigiano Reggiano
Directions:
Add 4 qt. of water to lg. pot+1blsp salt, bring to a boil.
Cube butter into 16 equal pieces. Once water is boiling, add pasta.
Turn the heat down to a low boil, cook 6 min. stirring so pasta doesn’t
stick to the bottom.
Once cooked, reserve 1 c. of pasta water. Drain remaining liquid, place pasta
back in the pot. Add cubed butter, toss to coat. Add half the cheese, toss to coat.
Then add half of the reserved pasta water and stir. Add remainder of the cheese
and reserved pasta water and stir to form a creamy sauce. Add S & P to taste.
Divide the pasta among six to eight bowls. Garnish with more grated Parmesan
I had it much easier-leftover butter chicken, aloo gobi and rice that I ordered in yesterday.

a combo, late breakfast, early lunch. Scrambled egg and bacon strips on a crusty bun ( toasted ) . Bottle of Mandarin/orange ( no sugar ) sparkling water.
Butter chicken, aloo gobi, rice and naan.
Toasted bacon and tomato sandwich.
This will be for lunch and/or dinner.
I had overbought on celery! Didn't want to chop and freeze any so an hour ago I made a large pot of celery/sweet potato soup.
This one will NOT get pureed, that way the guys will love eating a few servings. In the brew went 3 cups each diced celery and carrots,
1 BIG onion, and 1 very BIG sweet potato ( both diced ), 4 cloves diced garlic, 8 cups vegetable broth. Midway as the veg softened I
added 2 cups cooked organic wild rice and at the very end tossed in a full bunch of large spinach leaves.
Sprinkled in some salt, doesn't need much else.
