    Hi,

    Does anyone here work for Long term care or a Senior home as a Food Services Manager or Support Services Director?

    I always wonder how do Food Service Managers in long term care facilities come up with new recipes for their 4-week cycle menus. Do they generally ask the residents' families to supply recipes and then choose and tweak from that, or do they just google, or they get it from newspaper or magazines, or? Where do they start from?
    And once they find some recipes, they need to discuss with the cook if it is suitable in terms of preparation time, and cooking time? And then they need to calculate the menu cost after that? And then send it to dietitian on site for evaluation of nutrional balance?

    Any ideas or personal experiences?

    When my Mom went into a nursing home with ALS.. She sat down with the managers of the nursing home, and complained about what food they served too much of, and what they cooed too long for, making some foods horrible from cooking so long, but Mom made suggestions, and they followed her suggestions.. Just a idea..
