I am by no means a baking expert at all either... I use a lot of cake mixes... ahem, but it does the trick. I think the difference between gluten free banana bread and regular banana bread is that the flour would be gluten free versus regular? Haha... I might be wrong. Maybe the baking goddesses could better answer your question!

Oh!~ I have no idea... haha, I'd like to know that too. I have a nice banana bread recipe that'd be nice in muffin form. I would think if the amount is the same whether in muffin form or loaf form, cooking time should be the same. I'd probably just wing it and cook it and keep an eye on it. Then prick it with a toothpick to see if its cooked halfway through and just estimate.

I would say I'm pretty traditional. DH doesn't like it when I try to experiment too much. Me- I like to try everything at least once. You never know what you might like unless you try it. But I rarely cook anything like that because it's a lot to do for only one person.

Ok, trick to gfree muffins -add xantham gum - 1 tsp, make sure it has baking powder & baking soda in it so it will rise.
No difference in recipe otherwise. If you need one, I just perfected one for my blog that will be going up next week but I can slip it to you if you'd like

Really? My mom just bought some and said it was good. I have a big bag to try that I just got.
I've been using the Cuisine Soleil's all-purpose gfree mix and it's fantastic (not gritty at all). My DH who is a totally gluten-free hater, actually ate the muffins I made with it and said "not bad".
That's HIGH praise.
