    6. Buddy, how would you describe your cooking? Traditional, eclectic etc Do you like to cook ethnic food or stay to the basics etc. Mostly traditional and ethnic but everything from scratch.

    7. What is your all time favorite dessert?
    What isn't our favorite desert ? As long as it's not dripping in syrups and definitely nothing with whipping cream.

    8. Do you enjoy baking?
    Absolutely!

    9. What is your favorite baking recipe? C
    offee cakes, muffins, pound cakes, nothing too fancy.

    10. Buddy, do you have a keurig or a tassimo?
    Neither, just an old fashion perculator from the 70's...still makes the best coffee ever!

    11. Buddy, do you have a Kitchen Aid mixer? If so, what colour?
    I think it's silver...it's brand new sitting in the box...for the last two years . I really have to get it out and use it one of these days. I bet I'm going to kick myself in the @ss wondering why I didn't do it sooner.

    you are gonna kick yourself.......i hated baking and when i got it, banana muffins literally take less than 5 minutes to whip up

    Yah, but I'm not paying for a membership for flour for my 1 year old lol....I'll see about going with someone that has a membership, or whatever. I'm going to try this bag that I have now and then we'll go from there

    A: Lemon pie, pecan pie (which we never have at home, as dh allergic to tree nuts ), muffins
    Real answer to my favorite is New York style cheesecake - but I have never made a cheesecake - sooo, if you have a good recipe to send (that can be made without nuts), please feel free

    Q: Do you enjoy baking?
    A: Love to bake, and always looking for new recipes - but in an effort to be healthier (dh has crazy sweet tooth), I use whole wheat flour is most recipes, and replace the sugar with honey or maple syrup where possible, and the butter with canola oil where possible - the recipes don't need to call for that, I adapt/change recipes a lot
    This weekend made a really indulgent cake for dh's birthday - a 4 layer peanut butter cake with peanut butter chocolate ganache, and I snuck some whole wheat flour into that too

    Q: What is your favorite baking recipe?
    A: muffins - I love muffins, I think they are the perfect food, and would love more muffin recipes
    I currently have great recipes for
    - banana muffins
    - orange zucchini muffins with choc chips
    - orange blueberry muffins
    So other types of muffin recipes would be most welcome

    That reminds me...to my buddy, if you have a good oatmeal muffin recipe (that you've made before and can vouch for lol) I would love it!!!! Every oatmeal muffin recipe I find and try they turn out AWFUL. I remember when I was pregnant and craving an oatmeal muffin I made the recipe from the Quaker website for the "best oatmeal muffins"...ya, they definitely, were NOT. Lol, and yesterday I tried another one I found online and they were AWFUL - so bad that I threw them out! They tasted like flour muffins, bleh. So ya...I would love one that is actually good,

    In case no one answered, baking time for muffins much shorter than for loaf. Loaf typical baking time is 40-45 minutes, muffins are typically 20-25 minutes.

    The trick to making good banana muffins is to use very ripe bananas.
    I am linking here to banana muffin recipe on my blog to show you what I mean with the bananas. The recipe won't work as it is whole wheat, which is kiss of death for gluten intolerance, but adapt with whatever flour you need, and this should work for you.

    Why do you say you can't bake? What is it that isn't working out? If you are struggling with baking recipes turning out, it could be the way you measure your ingredients. Measure dry ingredients like flour in measuring cups that are for dry ingredients that allow you to use the stright edge of a knife to level the ingredient flat, ensuring you are using the right amount. Use a wet ingredients measuring cup for things like canola oil, honey, water, milk, etc., again to get the right amounts.

    And don't over mix. That will make for tough batter.

    Not I. I have an old hand-held one that I got for Christmas in my student days. It does the trick. I actually mix most stuff by hand as it is quicker and creates less dishes. And batter doesn't get over-mixed that way. I don't have room for a big one either on the counter or in the cupboards. Small kitchen means must carefully pick and choose appliances.
