I made these a few nights ago and they were great!
Cranberry Oatmeal Cookies
2/3 cup sugar
2/3 cup butter
2 eggs
1 1/2 cups large oat flakes
1 1/2 cups unbleached or whole wheat flour
1 tsp baking soda
1/2 tsp salt
1 cup dried cranberries
1/2 cup walnuts pieces coarsely chopped
Preheat oven to 375F
Beat sugar and butter until light and fluffy. Add eggs, mix well.
Combine oats, flour, baking soda, and salt in a separate bowl. Add to butter mixture 1/2 cup at a time, mixing well after each addition.
Stir in cranberries and walnuts.
Drop by rounded tablespoon onto ungreased cookie sheets.
Bake 10 minutes or until golden brown.

Here are the cookie recipes.
Walnut Crescents
Ingredients:
1 cup soft butter
¼ cup icing sugar
2 tsp vanilla
1 ¾ cups all purpose flour
1 cup finely chopped walnuts
Icing sugar
Preparation:
Cream butter and ¼ cup icing sugar together until fluffy. Blend in vanilla, flour and walnuts. Shape into small rolls, about ½” in diameter, and 1” long (about 1 tsp per cookie). Put on ungreased cookie sheet and shape into crescents.
Bake at 375 F for about 15 minutes. Cool a few minutes, and then roll in icing sugar. Cool completely and roll in icing sugar again before storing.
Makes 6 dozen
Chocolate Turtle Cookies - Makes 2 ½ dozen cookies
Ingredients
· 1 cup all-purpose flour
· 1/3 cup cocoa powder
· 1/4 teaspoon salt
· ½ cup butter, softened
· 2/3 cup sugar
· 1 large egg, separated, plus 1 egg white
· 2 tablespoons milk
· 1 teaspoon vanilla extract
· 1 1/4 cups pecans, finely chopped
· 14 soft caramel candies (I like to use Kraft caramels)
· 3 tablespoons heavy cream (can use evaporated milk instead of cream)
Directions
Dough Preparation
- Combine flour, cocoa, and salt in a small bowl.
- In a larger bowl, use electric mixer on medium-high speed, and beat butter and sugar until light and fluffy, 2 minutes. (If don’t have electric mixer, this can be done by hand.)
- Add egg yolk, milk, and vanilla to the butter and sugar mixture and beat until incorporated.
- Reduce speed to low and add flour mixture until just combined.
- Wrap dough in plastic wrap and refrigerate until firm, 1 hour.
Baking
- Heat oven to 350 degrees F.
- Line 2 baking sheets with parchment paper.
- Whisk egg whites in bowl until frothy. Place finely chopped pecans in another bowl.
- Roll dough into 1-inch balls, dip in egg whites, then roll in pecans. Place balls 2 inches apart on prepared baking sheets.
- Using the 1 teaspoon measure, make indentation in center of each ball.
- Bake until set, about 12 minutes, switching and rotating sheets halfway through baking.
- Microwave caramels and cream (or evaporated milk) in bowl, stirring occasionally, until smooth, 1 to 2 minutes.
- Once cookies are removed from oven, gently re-press existing indentations. Fill each cookie with 1/2 teaspoon caramel mixture.
- Cool 10 minutes, then transfer to wire rack to cool completely.
- Try not to devour them all at once.

We are currently celebrating birthday week at our house (my husband is Dec 7, I am Dec 8). My 2 year old has gotten a hold of my singing card, and keeps "blowing out" the singing candles. It's way too cute, but I'm not sure how much longer the battery can take it!
