That is a great project. Good luck, it will have such a huge impact.
I did this in 2011 but it was easier then as the P&G coupons were much better.,
Here is the thread I maintained throughout, hope you find a few ideas.
It's an older thread and some of the pictures are missing now, not sure why but you get the idea.

Nice! If you don't quite spend it all consider giving the rest in a cash donation to the food bank and getting a tax receipt. From what I hear, at least in Calgary, our food bank is able to turn each dollar donated into 4 dollars worth through bulk buying discounts-this way they can buy some perishables like meat, dairy, fruit and veggies etc.

Great mission and fantastic start!
My hubby and I did a shop for our area foodbank in October I think, spend about $50 and donated TONS of stuff. When we dropped off our donation, we did a tour of the facilities and spoke with the director. That's when I learned that most foodbanks also need non-food items for donations such as laundry soap, household cleaners, feminine products and other hygiene items.
In this area, the greatest need also comes at an unexpected time. Most of us think January/February is the crucial time, it's actually the summer months because donations are down and kids aren't in school.
