    EASY PUMPKIN CHEESECAKE
    2 8oz pkgs cream cheese, softened
    ½ cup canned pumpkin
    ½ cup sugar
    2 eggs
    1 dash ground nutmeg
    1 dash ground cloves
    ½ tsp ground cinnamon
    ½ tsp vanilla
    1 graham cracker pie crust

    1. Preheat oven to 350 degrees.
    2. Beat cream cheese, pumpkin, sugar, vanilla and spices in a large bowl with mixer on med. speed until well blended. Add eggs; beat just until blended.
    3. Pour into crust and bake 40 minutes or until center is almost set.
    4. Cool and refrigerate 3 hours or overnight.

    PUMPKIN CHOCOLATE CHIP COOKIES

    1 cup canned pumpkin
    1 cup white sugar
    ½ cup vegetable oil
    1 egg
    1 tsp. vanilla
    2 cups flour
    2 tsp. baking powder
    1 tsp. cinnamon
    ⅛ tsp. nutmeg
    ½ tsp. baking soda
    1 tsp. milk
    1 cup chocolate chips

    1. Preheat oven to 350 degrees.
    2. Mix pumpkin, sugar, vegetable oil, egg and vanilla in a large bowl.
    3. In a separate bowl, combine flour, baking powder, cinnamon, nutmeg and baking soda. Stir into pumpkin mixture and add the milk. Stir in chocolate chips.
    4. Use teaspoon to drop cookies onto a baking sheet. Bake 8-10 minutes.
    5. Place on wire rack to cool.

    DOWNEAST PUMPKIN BREAD
    1 (15oz) can pumpkin puree
    4 eggs
    1 cup vegetable oil
    2/3 cup water
    3 cups white sugar
    3 1/2 cups flour
    2 tsp baking soda
    1 1/2 tsp salt
    1 tsp ground cinnamon
    1 tsp ground nutmeg
    1/2 tsp ground cloves
    1/4 tsp ground ginger

    1. Preheat oven to 350°F. Grease and flour 3 7x3” loaf pans.
    2. In a large bowl, mix together puree with eggs, oil, water and sugar.
    3. In a separate bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the puree mixture until just blended. Pour into the prepared pans.
    4. Bake for approximately 50 minutes. Loaves are done when toothpick inserted into the center comes out clean.

    o.k. @cath007 you have convinced me to try and make Natasha's version of Baked Piroshi ( the beef savory one ) .
    I will only make an amount that reflects what I have in the house, which is 1 head of cabbage and a package of beef strips that will do nicely for the filling. I don't have sauerkraut through, never ever bought or made it.
    Wondering if I should bother?

    I want to just see if they come close to what her recipe looks like ( the finished product )

    I made a batch very early this morning and they turned out nice and quite tasty BUT imho just too much work for what you end up with.

    I always keep a jar or 2 of sourkrout on hand. I emply the jar, rinse the sourkrout and then i put it into a pot, add a bit of water, half a strip of chopped bacon, some fried onion and Juniper berries (optional). Set this on a slow simmer until done (make sure to check so the bottom doesnt burn). We use this as a topping on sausage sandwiches, or hot dogs, or with pork chops. very very tasty and wards off colds (or so my mother used to say).

    For those who love Tims Spice Harvest muffins, here is a copycat recipe that ive been making for a few years now. It always turns our great.

    Copycat Tims Pumpkin Spice Muffins

    1 3/4 cup all purpose flour
    3/4 cup packed brown sugar
    1 1/2 tsp baking powder
    1 tsp cinnamon
    1/2 tsp baking soda
    1/3 tsp salt
    1/2 tsp ground ginger
    1/4 tsp ground cloves
    1/4 tsp nutmeg
    1/2 cup canned pumpkin seeds (optional)
    2 eggs
    3/4 cup canned pumpkin puree
    1/4 cup vegetable oil
    1 tsp vanilla extrace
    1/4 cup milk

    Cream Cheese Frosting:

    1/2 pkg cream cheese, at room temperature (feel free to use a can of cream cheese frosting if its easier)
    4 tbsps confectioners sugar, sifted
    1/2 tsp vanilla
    1/2 tsp lemon juice

    1. Prehead oven to 375F and line a 12 cup muffin tin with muffin papers.

    2. In a large bowl, whisk together flour, sugar, baking power, cinnamon, baking soda, salt, ginger, cloves and nutmed. Then mix in 1/4 cup of the pumpkin seeds.

    3. In separate bowl, whisk together the wet ingredients: eggs, pumpkin puree, oil, milk and vanilla.
    Pour over dry ingredients and stil just until dry ingredients are moistened.

    4. Spoon into prepared muffin cups. Sprinkle with remaining pumpkin seeds. Bake in center of a 375F oven about 20-25 minutes of until muffins are golden and tops are firm to the touch. Let cool in pan on rach for 5 minutes before transferring to a wire rack to cool.

    5 While the muffins are baking, whisk together the cream cheese, confectioners sugar, vanilla and lemon juice. (if the frosting is too thick, add a bit more of lemon juice: if too runny, add more confectioners sugar). Set aside

    6. when muffins are cooled completely, inject each muffin with a generous amount of cream cheese frosting (about 1/2 tbsp each). Enjoy!

    Also here is the copycat recipe for the sweet pumpkin seeds for the Spice Muffins. (this recipe makes a big amount)

    Cinnasweet Pumpkin Seeds

    4 cups pumpkin seeds, rinsed and dried
    1/2 cup margarine, melted
    2 tbsps brown sugar
    1 tsp ground cinnamon
    1/4 tsp salt
    1/4 cjp white sugar, divided

    1. Preheat oven to 350F

    2. Combine the pumpkin seeds, margarine, brown sugar, cinnamon and salt in a bowl. stir to coat the seeds. Spread the seeds in a single layer in a 10x 15 inch jelly roll pan. (i used my 9 x 13 cookie sheet)

    3. Bake in preheated oven for 15 minutes; stir and return to oven for 15 minutes more; remove from oven and sprinkle 2 tbsps sugar over the seeds; stir to cat. Return to oven and bake another 15 minutes before removing again to sprinkle with remaining sugar and stirring. Bake another 15 minutes. Allow to cool before serving. Store leftover seeds in an airtight container.

    I have a very very simple recipe for baked apples.

    As many apples as you want to make (i usually bake 4 at a time for hubby and me)

    cut a small piece of the top of the apple and core it
    premix a mixture of cinnamon and brown sugar to taste(no real recipe, just as much as you like
    sprinkle some inside and on top (as much as you like)

    bake at 350F for 45 - 55 minutes (check to see because oven temps can be different) And thats it.

    Sometimes i will pour a bit of maple syrup on top or just substitute the brown sugar for maple syrup. Actually this recipe is using whatever rocks your boat.
