this thread needs a bump so I'm going to post something I'll attempt to make. So excited! My friend sent me a jar of Spanish saffron from Trader Joe's.
The dish is called Persian Saffron Rice. ( Tahdig ) The ingredients are simple but the technique is crazy complicated to me. The end result of this one
gives you a delicious crunchy top layer, items which were on the bottom of the pot under the rice during cooking. They can be a flour tortilla or sliced
russet potatoes. At the end of cooking, the pot is placed into a sink with cold water. Then the top gets a large plate put over it and you do the flip trick!

I hope mine turns out, making it tomorrow ( I hope )
