Sweet potato pancakes with a fresh banana on top. I didn't make it perfect but it is good and a nice change from eggs!

Homemade oatmeal pancakes-I make them fry pan size so only ate 1 /2 a pancake and saved the rest of the batch. They keep well in the fridge or freezer.

Used my handy dandy electric hard boiled egg machine to cook up 14 eggs this morning. DH wants to have some at the ready in case the craving for an egg salad sandwich hits him.
Also using my Junior Bullet grinder now to make up very soft ( almost pourable ) cat food servings . My 2 cats waste various meals by leaving the chunks of meat in the dishes. So now I dump in 1 small can of pate, some lick able tubes, a pouch of Whiskas that have chunks in them and top it all off with some Lil Soups.
Blend away! Problem solved! Now they slurp up all the dish contents and I can keep better track of the cat food budget. They are too spoiled as it is with treats galore!

Who needs to mash eggs to make an egg salad sammy?
I just spread a bit of mayo on bread, laid down slices of1 boiled egg, S & P to taste and voila!
Brewed a small mug of Espresso Keurig to go with.

Today was mashed potato/rutabaga combo and a peach yogurt. Strange combo I know but using leftovers up as going cruising tomorrow.

I combined 1 + 1/2 cups of PC plain Greek yogurt with a Tblsp. of organic pure cocoa,
1/2 banana sliced up, 2 tsp vanilla extract, teensy sprinkle of Stevia powder, 1 Tblsp. Ceylon
organic Cinnamon and 12 cup fresh blueberries. These NF berries were so large ...lol
Also sliced up one of DH precious Raisin Bran muffins, melting thin slices of Balderson's extra
old white cheddar on them. Of course there was coffee! lol
