Like a true woman I changed my mind AGAIN! I opted for greek orzo and chicken instead of fish. Maybe fish tomorrow???
Grr...DH got home from work and said I was using the rotisserie wrong on the BBQ...and then he proceeded to burn my beautiful bird to a blackened lump. It took me an hour to figure out how to truss the freakin thing. SO mad.
Made meatballs in mushroom gravy over garlic pasta and steamed asparagus...

last night was dominos pizza and cheesy bread :)
i really hate my local RCSS. I wanted to get last week flyer for a $1 off coupon on their BBQ chicken so I went on Friday then on early morning Sat and they had no flyer :rant: Oh yeah their CS is horrible so I avoid dealing with them at all cost.
So yesterday I was waiting in line to pay for 2 boxes of pizza pops for my little sister when I spotted a flyer in one of the basket. Picked it up and quickly flipped to the page with the coupon and :eek: the bbq chicken coupon was still intact!! Score!!!
Today is the last day to use the coupon so I'll pick up a bbq chicken with garlic bread for dinner. And we'll make a salad on the side too. Yum!! I love getting bbq chicken - no cooking involved and I feed the left over to the dogs. Haha - 1 bird feeds 4 mouths. :lolsign:

We went out to Kelsey's last night. I ordered the 16 wings at Thursday half price, and got the spinach dip with bread for free with the e-blast coupon. My husband wanted a chicken greek salad, so there's so much food left over that we're having some wings and leftover dip with bread for supper! Just add a quick noodle side dish and we're good to go!
I am 99.9% sure I will do fish. I plan (keep in mind plans change ;)) to make grilled talipa with a mango salsa over coconut basmati rice and grilled aspapragus. If if turns out will post a pic :)

Clear out the freezer night - I had most of a Dr. Oetker mushroom pizza (wow, yummy!), son ate a whole Four Cheese. Husband had a Delissio rising crust deluxe.

2 nights ago i made the yummyist dinner, i had my mom and (step) dad over... steak with the club house rub marinade in hickory... threw it in the oven to cook, then threw on rice with onions and then had some broc and carrots, and some asparagus to use up... to satisfy my moms craving for at least one thing slightly unhealthy i made a cheese sauce to go with the veggies... was supper yummy... and for the first time since moving to this place (beginning of feb) i had all of my burners on at once, as well as the oven
last night it was a quick easy dinner... as i had my mom shopping till we dropped (literally for her she has bad pain issues) so i picked up 2 of the bbq chickens from rcss (one with the meal, one at the $1.00 off price) then we got home and i threw in some of the betty crocker cheese and bacon scalloped taters, and then nuked the easiest veggies in the world (green giant) had 2 different kinds, the herb and garlic, and the cheese sauced broc and cauliflower... yummy, but not as good as the first night my mom was here
Making a vegetarian Morrocan Stew tonight, kind of sweet and a little spicy, with sweet potatoes and some raisins, veggies, and a little peanut butter added to make it "Moroccan"..yummy
Ok. So after so many Rep's asking for the recipe here it is:
Grilled Talapia with Coconut Basmati Rice and Mango Salsa:
MARINADE:
1/3 cup extra-virgin olive oil (I used canola since I ran out of EVOO)
1 tablespoon lemon juice
1 tablespoon minced fresh parsley (I used flat leaf kind)
2 cloves garlic, minced
1 teaspoon ground black pepper
1/4 teaspoon salt
2 (6 ounce) tilapia fillets
Marinade fish for 1 hour only
MANGO SALSA:
1 large ripe mango, peeled, pitted and diced
2 tablespoons minced red onion
1 tablespoon chopped fresh cilantro
1 jalapeno pepper, seeded and minced
2 tablespoons lime juice
1 tablespoon lemon juice
salt and pepper to taste
Set aside. Heat BBQ grill to MED/HIGH. Grease grill before placing talapia on. Wipe off the excess marinade and discard leftover marinade.
Grill 3-4min per side or untill no longer translucent.
COCONUT BASMATI RICE:
1 1/4 cup basmati rice
1 can od Coconut milk
1/2 can water
pinch of salt.
cook till tender
Then sit back and chow down!!!!
