the guys will be having the chicken adobo over rice for their work meal today and then tomorrow they are back to deli cold cuts. They've put a " pause " on
me making any hot meals saying it's too much when the weather is humid. Don't have to ask me twice, I have many Netflix, Disney+ and Apple tv + shows to watch.
It'll be back to the dinner sized Caesar salads for me for a few days.
talk about easy street! At the guys workplace today they are being treated to a full buffet for their dinner hour ( each shift gets their own, for some it will be the noon hour ).
They never know from year to year exactly what type of buffet it will be but it's always top of the line catering! I'm kind of jealous....ha ha
This of course meant no cooking them anything to take in.
got some cheap veggies (ice berg, bell peppers, grape tomatoes, mini cucumbers) last week so we've been having salads as part of our dinners.
also got a personal offer of $10 off when you spend $10 for SOF, got a small roast for $5 after the coupon. Made 2 meals out of the roast: beef fajitas and beef and broccoli
tonight, hubby will be making his grandma's bacon vinegrette ice berg salad and we'll have it with ham and cheese sandwiches.
I worked an event at one of our locations yesterday and then went Costco Shopping, my feet and legs did not appreciate this.
So dinner was a quick Sheet Pan with Homemade Potatoes Wedges, Roasted Broccoli and sausages. Quick easy and almost no dishes, my kind of meal after a long day.
blade steak meat pies! Made 4 of them, Tenderflake pastry bottom crust, Phyllo sheets on top.
Homemade aloo gobi-yummers.
Tonight Mom wants Chicken Wings but I do not eat Wings so I will BBQ Chicken Caesar Wraps, LOVE the mixture of Caesar Dressing and BBQ Sauce. We will both have roasted potatoes on the side.
For dessert, I have a batch of Cream Cheese Brownies in the oven.
Mmmm, indeed @lizzie bargain I had to search the recipes to see what that dish was and it's very similar to the Chana aloo I make using chick peas/potato.
Feeling inspired now to make a batch of the aloo gobi since I have a nice head of cauliflower in the fridge that I grabbed off the discount veg rack for a buck.
ty for posting!
update: Early on Monday morning I did make a nice large batch of aloo gobi ( thanks to @lizzie bargain and her " yummers " review! ha ha ), however I sort of combined my favourite Chana Aloo recipe with her gobi one. So this batch had Chick peas, spuds, onions, garlic, diced tomatoes, cauliflower, lots of heat spices and Tamarind paste. I decided to add some chopped up Cremini mushrooms only because I had a large bag of them to take from.
The guys are going to take that in for their work meal.
homemade buttermilk waffles! Made way too many, but will freeze the extras. Made up a fruit mixture ( mandarins, strawberries and blueberries ) with sugar water and thickened it up.
Turkey bacon on the side. Coffee. Breakfast for dinner.
I was hoping to try the Aloo Gobi recipe tonight but hubby's tummy was a bit upset so we thought it best to wait for another day.
Dinner is stuffed chicken breasts (frozen from the butcher), our last bag of Bistro express from our cottage week away and some peas heated in butter.
Have a nice evening
homemade turkey sub with roasted butternut squash soup
Chicken fajitas. We thought the chicken was boneless but it has some bone so hubby BQ'd and mixed it in with the peppers and onions. Bon Appetit
