Lemon grass pork chops with rice and lettuce, eaten with a super yummy nuoc cham (Vietnamese sauce)!
The pork was pan fried but a BBQ would work too. I love the caramelized/charred bits!
Tonight its brown rice pasta with roasted tomatoe and mushroom sauce. I will also be sauteing baby bok choy and kale with garlic mmm
Tonight will be the chili I made yesterday - didn't end up having it then.

burgers with cut up veggies
It's always a surprise what's for dinner here.
Last night it was a roast beef style dish with a blob of mashed potatoes & well boiled baby carrots.
It's always fun to lift the lid off the tray & see.
(hospital style food........what can you do)
p.s. I miss you guys a whole bunch!
Blech! I feel for you. I spent 8 days in the hospital last summer and begged my parents to bring me real food after I think day 2 LOL! I still have a hard time eating cooked veggies after the rubber they served at the hospital. I got to the point by day 8 I couldn't even lift the lid of the tray the smell would just kill me. I hated meal times...Then they all called me the princess of the floor because I wasn't eating the food and was having home cooked meals brought to me! Once I got out I gorged on fresh salads, veggies, fruits, and sandwiches LOL! Seriously is it that hard to toss together a salad for people???
tonight was just a plain ol' frozen pizza. at least i remembered to take the cardboard off the bottom. :)
steamed salmon..onions, zuchinni, peppers with garlic fried with a litte EVOO.. whole wheat egg yolks.
